  • 1½ cups mixed greens
  • ¼ cup yellow peppers, chopped
  • ¼ cup cucumber, chopped
  • ¼ medium pear, red variety; chopped
  • 2 tbsp crumbled feta cheese
  • 2 tsp vinegar
  • 1 tsp olive oil
  • 1 pinch table salt
  • 1 pinch black pepper


Notes
Arrange chicken, quinoa, greens, yellow pepper, cucumber, pear, and cheese on a plate; when ready to eat, toss with vinegar, oil, salt, and pepper.
