Former USDA leader nominated for trade undersecretary
Alexis Taylor, director of the Oregon Department of Agriculture, was nominated late Friday afternoon by President Joe Biden to the position of undersecretary for trade and U.S. agricultural affairs at USDA. Agricultural groups praised the nomination and called Taylor a “highly qualified candidate.”
Taylor is an Iowa native, who moved to Oregon after working 12 years in Washington D.C. where her work focused on U.S. agricultural and trade policy. Notably,Taylor served as the deputy secretary at USDA’s Farm and Foreign Agricultural Services department where she worked to open new markets and improve the competitive position of U.S. agricultural products in the marketplace around the world. CDFA feed regulations aim to reduce GHG emissions, food waste
The California Department of Food and Agriculture Commercial Feed Regulatory Program has announced new regulations supporting the reduction of greenhouse gas emissions by redirecting human food by-products to livestock feed, instead of going to waste and adding to methane emissions.
CalRecycle reports that Californians throw away approximately 6 million tons of food per year. CDFA's new regulations promote a decrease in food waste by redirecting food by-products to livestock feed, as long as the by-products are properly stored and handled and retain nutritional value. Examples of by-products are wet citrus pulp, tomato pomace, expired bakery products, wet distillers grains, restaurant leftovers and fruits and vegetables that don't meet market expectations. Chobani commits $1m to nation’s largest research dairy
Chobani announced May 11 a $1 million gift to the University of Idaho-led Center for Agriculture, Food and the Environment (Idaho CAFE) to help fund construction of the nation’s largest research dairy and advance scientific research to ensure a sustainable future for the U.S. dairy industry.

ADSA elects new vice president and board members
The American Dairy Science Association® (ADSA), the international organization of educators, scientists, and industry representatives who are committed to advancing the dairy industry, recently elected new leaders for the organization’s 2022–2023 term.
Dr. Federico Harte a professor in the Food Science Department at the Pennsylvania State University, was elected to the office of vice president for a one-year term. Dr. Selvarani (Rani) Govindasamy-Lucey from the Center for Dairy Research (CDR) at the University of Wisconsin (UW)-Madison., was elected Dairy Foods Division director, and Dr. Stephen LeBlanc a professor in the Department of Population Medicine at the University of Guelph and director of Dairy at Guelph – The Centre for Dairy Research and Innovation, was elected Production Division director. Both will serve three-year terms.
ADSA congratulates Harte, Govindasamy-Lucey, and LeBlanc and thanks all the candidates for their willingness to serve the association. ADSA also thanks the members who made their voices heard by voting in the election. (MORE)

Can pickles increase the health benefits of sour cream?
A new study in the Journal of Dairy Science® determined that adding pickled cucumbers to sour cream can improve its antioxidant properties and enhance its health-promoting activities Consumer demand for dairy foods has changed during the COVID-19 pandemic, with increased demand for foods that can be easily stored and maintain quality over time. In a new report published in the Journal of Dairy Science®, scientists from the Poznań University of Life Sciences (Poznań, Poland) investigated whether adding fresh or pickled cucumber to sour cream could improve its antioxidative properties or modulate cholesterol transformation during storage.
Demand for high-fat yogurt and sour cream has increased during the pandemic, likely because of their beneficial effects on the immune system or increased consumer interest in ketogenic diets. Research has also shown that the desire for refreshing products can be enhanced by adding vegetables, including cucumber, which is an ideal raw material for producing fermented foods.
“However, when pickled cucumbers are produced by spontaneous fermentation, the amount and type of microorganisms they contain can vary significantly,” said lead investigator Dorota Cais-Sokolińska, PhD, of the Poznań University of Life Sciences Department of Dairy and Process Engineering. “In addition, sour cream with vegetables is often sold in transparent packaging to increase its attractiveness. These observations led us to explore the potential benefits of adding fresh and pickled cucumbers (spontaneous fermentation) to sour cream (targeted fermentation) by examining the effects of this addition on the content of oxysterols. We also examined the effects of light exposure on sour cream with and without fresh or pickled cucumbers over time.”
Although future work is needed to characterize the properties of specific lactic acid bacteria produced by spontaneous fermentation, this study showed that the addition of spontaneously fermented pickled cucumbers to sour cream can inhibit the production of cholesterol oxidation products during storage, improve its antioxidant properties, and enhance its health-promoting activities through the presence of metabolically active lactic acid bacteria. The Council for Agricultural Science and Technology (CAST) has announced the 2022 Borlaug CAST Communication Award goes to Dr. Martin Wiedmann, Gellert Family Professor of Food Safety, Department of Food Science in the College of Agriculture and Life Sciences at Cornell University and an ADSA member. He is currently an associate director at the Northeast Dairy Foods Research Center at Cornell University and co-director at the New York Integrated Food Safety Center of Excellence. (MORE)
