The Astounding Medicine Within

You likely know that dark green leafy vegetables are healthy—a standout food intimately related to better heart and brain health. But did you ever stop to wonder why?

See the scrolling list of nature's healthy credits packed into a "simple" serving of spinach:

A magnifying glass hovering over an arrangement of bright green spinach leaves. A moving ingredient list showing dozens of healthy nutrients and compounds is scrolling in the lens of the magnifying glass.

Which of the vitamins, minerals, and molecules shown above are responsible for the health benefits? Nutrition research hasn't determined that any single ingredient is the magic health elixir ...but what is clearly understood is that the nutrient package is incredible medicine.

As we near the end of National Nutrition Month, we urge you to celebrate the hidden wonder of healthy foods... and make sure to take full advantage of nature's bounty!

And if you're looking for an easy way to tap into the powerful health benefits of spinach, this economical one-pot spinach dish is one we especially enjoy:

Gaples Institute Executive Director Dr. Stephen Devries designed and taught a new one-week in-person class for Harvard medical students and public health students. With an emphasis on practical strategies, the class equipped students with knowledge and skills to leverage the power of nutrition in patient care.
