A Message to our Community Members
Team Bonding
In early March, our team attended a lunch at Lady Byrd Café in Los Angeles, which gave us the opportunity to talk and learn more about our colleagues.
Social gatherings such as this luncheon help leaders form interactive, supportive, and high-functioning teams. For example, problem-solving, listening, and organization are essential team-building skills. In order for our team to be able to navigate through the community to build connections, we have to take the time to check in with ourselves and each other. With strong team-building skills, we will be able to serve the South L.A. community and maintain our connections with other community organizations and schools in the L.A. area.

Simple Lemon-Herb Chicken
Lemon-herb chicken is a simple, quick, and delicious dish. All you need are a few herbs, a lemon, and of course, the chicken! The number of spices is completely up to you. You can add more or less according to your taste.
Ingredients:
- 2 (5-ounce) skinless, boneless chicken breast halves
- 1 medium lemon, juiced, and divided.
- Salt to taste
- 1 tablespoon olive oil
- 1 pinch of dried oregano
- Ground black pepper to taste
- 2 sprigs of fresh parsley, for garnish
How to prepare:
- Place chicken in a bowl; pour 1/2 of the lemon juice over top and season with salt.
- Heat oil in a small skillet over medium-low heat. Add chicken to the hot oil, along with the remaining lemon juice and oregano. Season with pepper. Sauté until golden brown and the juices run clear, 5 to 10 minutes per side.
- Serve with parsley for garnish.

Fun Fact
Poultry breasts are the most healthful and leanest cut; thighs, wings, and drumsticks are slightly higher in calories and fat. Make sure to remove the skin before you eat it, as that is where a majority of the fat is stored. The best ways to prepare poultry include roasting, baking, or grilling.
