Business Spotlight

Okola-homa Soda Company

During a family picnic in Edmond, Oklahoma, in the summer of 2017, the idea of creating a unique cola, one that would set itself apart from traditional name brand soft drinks, came to be. After performing dozens of taste tests of over 100 varieties of different soft drink flavors, they developed their own unique flavors that are sure to please. Each of the sodas is specially crafted with only the finest ingredients, including pure cane sugar. When considering our soda company's name, the goal was to develop the only family-owned "Made-In-Oklahoma" craft soda company offering a variety of wonderful flavors. Thus, the name OKOLA-HOMA was born!

Erin Johnson, business/marketing client coordinator, recently assisted Okola-homa Soda Company with trade marketing an OSU "Orange" Soda, which is an officially licensed Oklahoma State University product. The OSU "Orange" Soda is available for purchase at the on-campus Twenty Something Convenience Store located in the Kerr-Drummond mezzanine.

Suitability of sodium acid sulfate as an antimicrobial intervention for in-shell walnuts - Ravi Jadeja, food safety specialist

Foodborne illnesses have been associated with contaminated walnuts. In fact, four foodborne illness outbreaks have been associated with Salmonella.

This research investigates the use of a novel Generally Recognized as Safe (GRAS) compound, sodium acid sulfate (SAS), as an antimicrobial intervention for the walnut industry. Findings to date suggest SAS is an effective antimicrobial in walnuts and the presence of organic matter does not impact the antimicrobial efficacy of SAS. Master of Science graduate students, Conner McDaniel and Xin Mei Teng work on the research team.
