How To Make Port

Making Port is much like any other winemaking process; grapes are harvested, crushed and fermented with yeast to produce wine.

Additionally, fortified wines are made by adding brandy or other distilled spirits to the grape must before all the sugar has been converted to alcohol. And this process is known as fortification, which helps preserve the natural sweetness of the grapes and increase its alcohol content.

Following fortification, this port is aged in oak barrels for a period of two to three years prior to bottling. And the result of this aging process imparts the sweet and fresh fruity notes. Moreover, the winemaking process includes filtering; thus eliminating its capacity for further maturation while keeping its vibrant ruby color.

What Are The Two Types Of Port

Tawny port is aged for a longer period than ruby port. During this aging process, it develops an amber color and has a nutty flavor with hints of caramel. The tannins in tawny port are less intense than other varieties of red wine, making it smoother to drink.
It’s typically served with desserts such as crème brulée or chocolate mousse but can also be enjoyed on its own as an after-dinner drink. 

On the other hand, Ruby port is not aged for nearly as long as tawny port (usually two years or less). As such, its flavor tends to be much fruitier and fresher than tawny port, with notes of blackberries and cherries on the palate. 
And it also has higher levels of acidity, making it ideal for pairing with cheeses such as blue cheese or brie.

Fonseca Bin No. 27 was created over a century ago for family consumption, and only released commercially in 1972. It is produced primarily from wines from Fonseca's own quintas in the Cima Corgo and thus shows an exceptional quality and consistency from year to year. Blended from reserve wines selected for their intense fruit character and depth of color, Fonseca Bin No. 27 spends four years in large wood vats prior to bottling. Although it may improve slightly with bottle age, Bin No. 27 is ready to consume when bottled. It does not require decanting, as a cold precipitation prior to bottling prevents any "crust" from forming. Its well-knit structure, rich, velvety full body and luscious blackcurrant and cherry flavors, also evident in the nose, carry into an intense, lingering finish. Bin No. 27 should be served at room temperature either alone or with simple, classic last courses and desserts. It is best consumed within two weeks after uncorking.

Hand-picked at the optimum time, the grapes are then destemmed, crushed and converted into wine through a process of careful maceration to extract their colour, tannins and aromas, enhanced by constant churning during fermentation. This takes place in stainless steel vats at a controlled temperature, between 28-30°C, until the right degree of sweetness (baumé) is achieved. At this point, grape brandy is added to create the final fortified wine. Obtained by the blending of wines of different harvests, with different levels of maturation in stainless steel and wood for a minimum of 3 years, the result is a rich and aromatic wine, with the perfect level of sweetness.

Our friends over at Kentucky’s own Willett Distillery have one kind of barrel: wood. And they put two things in them: Bourbon and Rye. We were fortunate enough to get some of their Bourbon barrels, and we put a special coffee-fied version of our Imperial Stout in them.

100% Barrel-Aged, 0% Stainless. Brewed using every highly roasted malt we could get our hands on and coffee from our buds at Chicago’s-own Metropolis coffee. Aged in Bourbon & Rye barrels from our friends at Willett Distillery.
