Denise's Cooking Corner - Watermelon Tomato Burrata Salad

Ingredients
Cucumber
Cherry tomatos
Burrata
Great olive oil
Salt and Pepper
1 whole Watermelon marinated for 30 minutes in:
2 cups soy
2 cups mirin
1T garlic
1T ginger
1/2 cup honey
2T salt
I had this at a friend's house and it was the perfect summer food. As with most original recipes, the directions are a bit scant, but make it to your own taste and you'll not be disappointed!

Denise's Book Corner - Pride and Prejudice by Jane Austen
|

Written over two centuries ago and found in nearly every library, I wanted to reread this classic to check out its relevance. The title Pride and Prejudice means something different to us than it would have in Austen's day. Pride has a positive meaning to us. We are proud of this or that. But in Austen's day, pride was one of the seven deadly sins. If you were proud, you considered yourself too good to have a relationship with someone perceived as having lesser standing. We might call that arrogance of even prejudice. Conversely, prejudice then had a different meaning. It related to manners, first impressions and jumping to conclusions.
So why is this novel academically valid and still a good read?
1. It is a novel about reading. One of the biggest focuses of the novel is how reading can positively impact someone. The protagonist, Elizabeth, is a reader. She rejects a card game to immerse herself into books.
2. It has Rom-Com elements. Blending the elements of romance, sarcasm, and comedy, the novel focusses on Elizabeth and Mr. Darcy and how they let go of their pride and prejudice in order to be together.
4. The characters are well developed with themes and choices relevant to today.
5. Life's harsh reality. The fate of Elizabeth’s friend, Charlotte, is not so good. She is the daughter of a retired knight. She is too educated to marry a working man beneath her social standing. But since she is average-looking, she fails to get matched with someone of the upper class. Her only choice is compromise.
As a woman author, Austen was unusual for her time and she published her works anonymously. Pride and Prejudice was said to be authored "by the author of Sense and Sensibility."
I love going back to the classics from time to time.
