The WCEDP is a 501©3 Non-Profit organization financially supported by local community governments, county, and private businesses dedicated to supporting and creating a sustainable economic profile in Wright County. The WCEDP fulfills its mission by providing technical, financial and workforce development assistance to businesses and residents in Wright County and those looking to locate in Wright County. The Partnership provides economic development assistance to the 16 cities and 11 area Chambers of Commerce in Wright County. Business retention, expansion, recruitment and creating an entrepreneurial atmosphere is a strategic imperative of the WCEDP as well as workforce development, marketing, and capacity building.

RHUBARB CUSTARD PIE

1 unbaked 9’ pie crust – 2 if you want a lattice top

2 ½ c. diced rhubarb

1 ¼ c. sugar

3 TBS. flour

1/8 tsp. salt

3 TBS. melted butter

3 eggs, beaten

1 c. whole milk


Mix rhubarb, sugar, flour, salt and melted butter. Pour into piecrust. Mix eggs and milk, pour over rhubarb. Bake at 450 for 10 minutes, reduce heat to 375 and bake 30 to 40 minutes longer or until custard is set. Let cool before cutting.



* Fresh rhubarb is better than frozen for texture of pie. Whole milk is a must.

A lattice top crust is nice but not necessary.


This recipe is from Chuck’s grandmother and is still a family favorite many years later.
