WHAT THE HECK IS A KOLSH?


The style of a Kölsh is incredibly unique in the craft beer world. To legally be called a Kölsh, it is a style that must be brewed in or around Cologne, Germany. While this is a relatively common circumstance in the world of liquor with Champagne and Cognac needing to legally be crafted in a particular area of the world to hold their title, that isn't typically the story for beer! Now, craft brewers typically finds themselves importing German hops to achieve both the characteristic's of the style and the legality of calling their brew a Kölsh due to the relatively strict rules surrounding it. In fact, in Germany, they have something called the Kölsch-Konvention which is a set of rules dedicated to the production of Kölsh's! By German law, only barley, hops, water, and yeast may be used in brewing this style. Long story short, Germany does not mess around when it comes to their beer, especially Kölsh's.


Now we know this brew originated in Cologne, Germany and the characterization of this style is deeply rooted in that, but what else makes them unique? Kölsh's are top fermented, a process in which yeast, typically what we call "ale-yeast" rises to the surface of the chosen fermenting liquid. Now, top-fermentation typically occurs at higher temperatures upwards of 70 degrees, but a Kölsh is then cold conditioned like a lager, resulting in that beautiful crisp characteristic, Styles such as pale ales, brown ales and even stouts are often top-fermented, beer brewed with this process typically exhibit a wider range of flavors and aromas with a more complex flavor profile and nose! The head on the beer also typically pours finer with a creamier, fuller taste.


When we're breaking down the flavor profile further, Kölsh's are often defined by its gentle hop profile, clean and crisp properties and their subtle fruitiness that balances the moderate bitterness. This brew touches lightly on grain and malt flavor, some exhibiting flavors of fresh baked bread and biscuits! This style certainly isn't characterized as sweet, but they do typically end on a soft sweetness from the malt. Kölsh's have a low to moderate bitterness, hops are not the start of the show with this style, making them a fantastic choice for those looking to explore out of hop forward ales and IPA's. If any hop flavors are present at all, expect floral and herbal notes to be present. With a dry finish, its delicately balanced flavors make for a perfect Summer beer.

Tilquin Lambics are Belgian sour beers produced by Gueuzerie Tilquin, one of the few lambic blenders in the world. Located in Bierghes, Belgium, Tilquin specializes in blending and aging traditional lambics sourced from renowned breweries like Boon, Lindemans, Girardin, and Cantillon. Their gueuze, known for its balanced tartness, funk, and complexity, is made by blending one-, two-, and three-year-old lambics.


These beer's have nearly become obsolete in CT, I haven't seem them floating around for a very long time! I am incredibly grateful to have gotten my hands on these 3 varieties to share with you all. Coming in at $29.99, these lambic style brews are available in the "Sour Beers" section of our cooler!
