These adorable miniature cheese balls are guaranteed to be a hit at your next party. They deliver a delicious one- or two-bite cheesy hit—with three kinds of cheese—and are fantastic on their own. You could also serve them with crackers or crudités if you prefer. The everything seasoning offers a rich, robust, garlicky flavor that’s downright irresistible. If you have any leftover cheese balls, they’ll keep in the fridge for 2 to 3 days. Enjoy them as snacks, or spread them on your morning bagel.
Ingredients
8 oz Neufchâtel cheese
¾ cup reduced fat sharp cheddar cheese made with 2% milk, shredded
½ cup grated parmesan cheese
¼ cup everything bagel seasoning blend
¼ cup chives, chopped
Instructions
In a medium bowl, mash the Neufchatel with a silicone spatula until creamy and smooth. Stir in the cheddar and Parmesan until well blended.
Combine the everything seasoning and chives on a plate. Scoop the cheese mixture with a small cookie scoop (1 ½ to 2 teaspoons) or a spoon, rolling each portion into a ball. Roll the balls in the seasoning blend mixture to coat. Arrange on a platter; chill for at least 1 hour before serving.
