Welcome to the Chamber's 2022 Small Business Spotlight series, where we take a moment each month to highlight one of our small business members! This month's feature company is Pea-Fections.

We sat down with owner, Becky Pea-Stenger, to ask her a few questions about the business. Read below to learn more about Pea-Fections!

Since May 20, 1996, Becky & Bill have offered a personalized style of dining to downtown Vincennes. With their unique cheesecakes, specialty tortes and gourmet foods, they have pleased many palates.

Becky Pea, a native of Vincennes, is a graduate of Purdue University's Restaurant program, with an additional degree from Johnson & Wales Baking and Pastry Program. Bill, from Au Gres, MI, served a four year term in the U.S. Marines as a Chief Cook and Bakery Supervisor. He also graduated from Johnson & Wales with a degree in Baking and Pastry Arts. His time is now divided between Pea-Fections and teaching Culinary and Pastry Arts at Vincennes University. Becky and Bill also have three sons, Alex, Trevor, Kyle, and a daughter-in-law Brianna.

My husband Bill and I started Pea-Fections 26 years ago with zero money, an angel investor, a vision, a dream, determination, experience and hard work. Out of necessity, we lived in the basement of the restaurant for the first 5 years. Because both of us came from very humble beginnings, we knew we had to do this to survive. Failure in the restaurant business was and is very high, so we did everything not to become another statistic.

We learned in school that to be successful in this business, your guest need to walk away and crave certain foods that are synonymous with your business name. From the day we opened to now, Pea-Fections is known for chicken salads, homemade soups and of course desserts. Customers tell me the moment they tried our broccoli cheese soup and chocolate bar a la mode they knew that we would be a staple in the community.

In 1996, our menu consisted of 5 entrees, 2 soups, 2 salads and 4 desserts. Now in 2022, we have 18 sandwiches, variety of soups, 10 salads, and many memorable desserts. We buy the best ingredients and our products are homemade. For toast points, yes, we really do proof the bread dough for a couple of days and potatoes for the homemade potato salad bake in the oven for over an hour! I truly believe that consistency, attention to detail, and customer service are big components to our success, but our best ingredient is that THE BOSSES WORK HERE!

At the end of August, Pea-Fections changed our daily dessert. We now feature the following:

Anniversary Torte: Three layers of moist almond cake iced with a special blend of our famous Milly and Italian buttercream and coated with sliced almonds.

Mocha Torte: Chocolate cake with layers of chocolate ganache and espresso whipped cream.

Turtle Cheesecake: Chocolate cookie crust with hazelnut cheesecake, a chocolate swirl, and garnished with pecans.

Chocolate Bar a la Mode: This classic has been with us since day one. A warm moist chocolate cake topped with vanilla ice cream, drizzled with dark and milk chocolate sauce.

Uncle Roy’s Bread Pudding: This family favorite has a silky custard texture, with pecans, and is covered with a vanilla rum sauce.

In January 2022, Pea-Fections started closing on Saturdays. This decision has been life changing. After working 6 days a week for over 26 years, it was time. For so many reasons, this needed to happen. From family time, down time, scheduling of employees to the acknowledgement that “Life is to short”, we needed this change as small business owners. This has certainly been a boost for morale for our team. To have a sense of normalcy in this industry, is truly a blessing. We do look forward to our special Saturdays openings and so do the customers. We will be open the following Saturdays: Sept. 10th & 24th, Oct.8th and every Saturday in November and December.

We serve our full lunch menu from 11am to 2pm. Because of the time change and our numerous customers from over the bridge, we decided years ago to extend our serving hours. Our limited lunch menu is served from 2pm to 4 30pm. Because our kitchen staff is cleaning and preparing for the next days’ service, the menu needed to be easy for the wait staff to prepare. We have many guest that meet in the afternoons to enjoy coffee and dessert or a late lunch.

Our carry-out/to go business is a huge part of our daily sales. We pride ourselves on fast service. People usually have a limited lunch hour so our customers expect us to be efficient and respectful of their time. We offer many catering trays and our food in bulk orders. This comes in handy for bereavement meals, office parties or family gatherings. The holidays are around the corner, and Pea-Fection’s soups, chicken salads and desserts will satisfy all your cravings!
