For boxes being picked up the week of Thanksgiving the customization and pick up schedules are as follows:


Customization begins Monday, November 18 around 5pm until Wednesday, November 20 at noon. Get your Thanksgiving menu ingredients list ready to go!


Thanksgiving week delivery schedule:

• No change to Tuesday and Wednesday delivery schedules.

• Thursday deliveries will be delivered on Tuesday, November 26 same pick up time.

• Friday deliveries will be delivered on Wednesday, November 27, same pick up time.


For boxes being picked up the week of December 3-6 customization begins Monday, November 25 around 5pm until Wednesday, November 27 at noon


Daybreak staff will be off November 28 through December 1 to spend time with family and friends. We’ll be back at it on December 2!

Meet the Farmers of Villageside Farm!

Year-round, you will find produce available in our farm boxes from Villageside Farm in Freedom. In their own words, let’s learn about this awesome community farm that keeps us fed with their organic produce every month of the year!


We are Polly and Prentice at Villageside Farm in Freedom. We have been farming this lovely land since 2001. We love to eat delicious food, to be outside, to grow things, to build things and we don't mind getting dirty. We are friendly and professional. We market our vegetables to restaurants, distributors and natural food stores. In the Spring, we host several on-farm seedling sales. We have three young sons and we enjoy the challenges and rewards of working from home with them. We have a beautiful network of family support that makes the busy months possible.


We both strive to be clear communicators and make it an everyday goal to see things through others' viewpoints. We respect and welcome diversity of all kinds. Our interests besides agriculture include exploring nature, art, music, food, woodworking, everyday activism and peacemaking.


Ultimately, we aspire to build a farm business that is a true asset to our community and local economy. We aim to build a sound farm business that supports our family financially and demonstrates our ethic of service to the land, community and greater good. We train 4-5 farm interns each growing season. We consider our mentorships to be an important way we contribute to the future of agriculture and the health of the Earth community. We hope to not only serve our customers with a wide array of wholesome farm products, but also to create a place where neighbors can interact and people can connect with the source of their food. We imagine Villageside Farm as a community resource.

Basic Kimchi Recipe

Villageside Farm shared their go-to recipe for basic kimchi. Stock up on what you need the next time you customize your farmbox!


In the Fall, one of our projects is to make a basic fermented kimchi. Traditional Korean kimchi has salted shrimp and fish sauce, but our family prefers the all vegetable alternative. We make it in a large ceramic crock, but it's easy to make a small batch in a few quart jars. Fermenting is such a healthful and easy way to preserve the harvest!  A book we highly recommend is "Wild Fermentation" by Sandor Katz. 



Ingredients:

  • 1-2 pounds Napa cabbage, coarsely chopped
  • 1-2 large carrots, sliced thinly into rounds
  • 1 large watermelon or daikon radish, sliced thinly
  • 1 bunch of scallions or an onion, chopped
  • 3-4 cloves of garlic, sliced or chopped
  • 2 tablespoons of grated ginger root
  • Chili flakes or a hot pepper if desired
  • 2-3 Tbsp salt


Directions:

Toss the ingredients and the salt. Knead with your hands to gently crush the cabbage a bit. Let sit for a few hours or overnight on the countertop to release some moisture. Pack into mason jars, pressing down as you do with a wooden spoon. When the jar is full, add enough water to cover the vegetables. Ideally they stay beneath the level of the water. If not, press them down daily or place some kind of weight on them. A clean stone works well! Let the jars sit on the counter for 4-7 days until it smells delicious (not like an apple pie, but delicious like fermented vegetables!). Taste! If it's too salty, rinse a bit with water and repack. When to taste and flavor, place in the refrigerator. It will keep for many weeks!

When Scarborough Librarian Deanna, and Gather Owner Krista, both reached out to us about starting farmbox sites in their communities, their enthusiasm for the idea and obvious passion for healthy, organic and local food made our decision easy… let’s do this! We couldn’t be more excited to partner with these local organizations and businesses, and to help bring more Maine grown and organic food to Mainers. We hope you join us!
