Summer is in Full Swing
August is all about abundance! Mother Nature has bestowed us with a wonderful balance of sunshine, heat and rain this season, so the fruits and veggies are even more plentiful than usual. Bumper crops of tomatoes, basket upon basket of eggplant, and a plethora of perfect peaches mean bulk specials at the market this week. Take advantage of the produce windfall and preserve those summer flavors so you can enjoy them all winter long! Canning, freezing (super easy), and fermenting are just a few ways to capture the magic of the season. Nothing beats a homemade salsa, a rich marinara sauce made with heirloom tomatoes, your own sweet pickles, or a gorgeous jam. Or keep it simple and freeze corn right off the cob, or shredded zucchini for winter recipes.

A friend of mine passed away recently and she has been on my mind. She was a real character: she made me laugh one minute and then frustrated the heck out of me the next! We liked to talk about food, though. She had funny ways of saying some words: “tufferware” instead of Tupperware, and “toe-food” instead of tofu. But she was almost always up for trying “something different”, which is more than I can say for a lot of people. This one’s for you, Karen. 

Toe-Food (Tofu) Salad

For the dressing: 

1/2 cup peanut butter
Juice of one lime 
2 Tbsp soy sauce
1 Tbsp fish sauce 
2 tsp maple syrup 
1/2 tsp red pepper flakes 

Stir all ingredients together until combined. Thin with water if necessary to get a pourable dressing. The salad part can be whatever you like; I used shredded Napa cabbage, cherry tomatoes, carrots, cucumbers, scallions, red pepper and cubed baked tofu. I like the baked tofu because it’s already been marinated and has lots of flavor, but feel free to make extra dressing to marinate regular tofu in, then pan fry for a few minutes. Assemble your salad components and drizzle with peanut dressing. Serves 2.

Get your ball jars ready and make some room in your freezers, it's time to stock up and savor the flavors of summer. Ask your farmers for their favorite summer recipes and storage tips and tricks. 

It may be the last week of edamame and cucuzza squash but shishitos, green beans, celery, eggplant and peppers continue. Other offerings include beets, carrots, kohlrabi, turnips, mini gem romaine, onions, garlic, shallots, fennel, kale, chard, cucumbers, zucchini, herbs and more. And look for yellow peaches and pears from Comeback Orchards too!

Farmers Jenn and Bryan at Holy Cow Farm have been hard at work this week keeping up with summer bounty of blooms. Flower production always reaches its peak in August, with heat-loving varieties like zinnias and cockscomb celosia blooming in full force. There will be a ton of variety in the mixed bouquets this week, as well as some fun single-variety bunches for sale. Their biggest foxgloves yet will be making an appearance, alongside some delightful dahlias and multiple kinds of celosia. There's truly something for every flower appetite this time of year, so be sure to stop by the Holy Cow stand early this Saturday before they're all gone!
