Member Spotlight

Scott Castlaw
Scott came to LIFT Wellness Center in 2017. Scott said that God led him to LIFT and all the glory goes to Him. He started in the Exercise is Medicine program with Hillary Keen when the program was new.

Scott said he may have been the tenth member in the Exercise is Medicine program.

In the beginning, he could hardly walk and weighed over two hundred pounds. Scott was diagnosed with his Multiple Sclerosis in 2012. After Scott graduated Exercise is Medicine, he wanted to give back to LIFT Wellness Center and started volunteering with us.

Scott lost over 35lbs and is walking much better. Actually, he is participating in our Mission Slim Possible Challenge and is puting out big numbers for his team.

Coming to LIFT Wellness everyday has become part of his life. LIFT is like family to him, and he is like family to us. You can see Scott almost every day at our front desk greeting everyone with a smile and offering conversation.

Your first class is always FREE, come try us out!

March is National Nutrition Month and April is National Garden Month. That means it’s a great time to start thinking about what you can grow at home this year. With the cost of foods and many other goods increasing, a garden is a cost effective way to ensure you are getting a variety of delicious, nutritious foods.

Gardening has nutritional benefits, increases your physical activity, and is a great way to get outside. Having fresh fruits, vegetables, and herbs readily available just outside your door can add tons of flavor and variety to your diet. Tomatoes, zucchini, and basil are heartier plants and could be a great place to start. Salad greens don’t take long to grow, and you can keep a fresh supply of them all summer long.

Having a garden can be as simple or complex as you can handle. If space is a concern, you can place pots to grow tomatoes or peppers on your balcony or patio. Herbs can flourish inside near a sunny kitchen window, which can make them very convenient to use! Building (or buying) raised beds can offer easier access to your garden if you have mobility concerns, and it may help keep weeds out of the area more easily. It can be very easy to want to do everything when you first start out, but that can get overwhelming. Stick with a few fruits or vegetables that are staples in your house, and expand from there!

Gardening can provide us with greater appreciation for food, and can provide a great learning tool for kids to better understand the long journey our food takes before it gets to the table. It encourages more fruit and vegetable intake, and can increase our mental health. Here is a simple, delicious recipe to hold on to for when you have your own zucchini and herbs growing!
Baked Parmesan Zucchini

INGREDIENTS:
  • 4 zucchini, quartered lengthwise
  • 1/2 cup freshly grated Parmesan
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • Salt and ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoon chopped fresh parsley leaves

DIRECTIONS:
Preheat oven to 350 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.

In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste.

Place zucchini onto a prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown.

Serve immediately, garnished with parsley, if desired.
