CASA CORNER

Veggie Frittata
serves 4

Ingredients

  • 2 quarts boiling water
  • 1 pound thin asparagus
  • 1 cup sliced onions
  • ½ pound red peppers, sliced
  • 8 eggs
  • salt pepper, to taste
  • 1 tablespoon oil
  • 4 scallions, white and green part, thinly sliced
  • ¼ cup packed chopped fresh Italian parsley
  • 4 oz. cream cheese, cubed (optional)

Instructions

  1. Snap off thick ends of asparagus. Cut into ½-inch pieces. Blanch in boiling water until bright green. Drain and refresh under cold water. Drain thoroughly.
  2. Preheat oven to 400 degrees F.
  3. Beat eggs with fork and season with salt and pepper.
  4. In large nonstick pan, heat oil over medium heat and add onions. Cover pan and cook 2-3 minutes until onions are tender.
  5. Add asparagus, peppers and chopped parsley to skillet and stir well. Spread evenly over bottom. Season with salt and pepper.
  6. Pour in egg mixture. Eggs should cover vegetables. Add cream cheese cubes and scallions and increase heat to medium. Cover and cook until crust forms underneath, about 1 to 2 minutes.
  7. Transfer pan to oven and bake uncovered, until firm, 5 to 7 minutes. Remove from oven. Let stand for 5 minutes.
  8. Cut and serve.

Note: Grilled eggplant and low fat cream cheese may be added to increase fiber and protein. This is an excellent dish for brunch and can be accompanied with a spinach and walnut salad.

The City Health Dashboard is a great tool that makes using local data easy! Its new video series explains why and how to use the tools and resources offered on the Dashboard. Each video follows a fictional character as they use the Dashboard to move from data to action in their community.

In this video, a community coalition leader named Donna explores the City Health Dashboard’s data and demographic breakdowns in order to better understand equitable access to healthy foods across the town’s neighborhoods.

COMPASSIONATE COMMUNITY
Healthy RC Celebrates National Day of Racial Healing
On Tuesday, January 19th, Healthy RC’s Compassionate Community Subcommittee participated in the National Day of Racial Healing. This annual event provides a venue for contemplation that fosters racial healing and unites communities across the country to advance the work in racial equity and social justice. Hosted and launched by W.K. Kellogg Foundation in 2017, it aims to bring all people together in their common humanity and inspire collective action to create a more just and equitable world. Over ten Compassionate Community Subcommittee members represented the City of Rancho Cucamonga in the live event, hoping to learn from and be inspired by other communities, as we continue our own efforts to accomplish those very same objectives in our city.

Prominent celebrities such as John Legend, Yara Shahidi, Hasan Minhaj, Padma Lakshmi, and Camila Cabello participated in crucial discussions. They emphasized that this important work truly starts at the local level and in the very hearts of our own neighborhoods. They encouraged everyone to remain actively involved, continue the conversations, and engage with local leaders to advocate for reform where needed. The City of Rancho Cucamonga was joined by many other communities and organizations across the country working towards these common goals (see photo of event map). Healthy RC’s Compassionate Community Subcommittee is currently developing a workplan that tackles some of these issues. The workplan specifically considers and prioritizes the community feedback received from the focus groups of the recently concluded Building a Path to Unity symposium last November.

MENTAL HEALTH
Healthy RC Hosts Training on Teen Mental Health First Aid
On Friday, January 29th, Healthy RC provided its community partners and stakeholders with a free training opportunity that prepares them to support teen mental health challenges. Over 20 Healthy RC community partners from various Healthy RC programs and subcommittees including the Youth Leaders, the Mental Health Subcommittee, and the Compassionate Community Subcommittee, participated in this 4.5-hour training. Dr. Teresa Etheridge from the Humanity Center 4 Change facilitated the training using the Youth Mental Health First Aid USA curriculum from the National Council for Behavioral Health. As a Mental Health First Aider, those who participated are now prepared to understand, identify, and respond to young people experiencing mental health challenges such as depression, anxiety disorders, psychosis, and substance use disorders. Even though a Mental Health First Aid training does not teach someone to be a therapist, it teaches and equips them with the right tools and knowledge to provide initial help until appropriate professional resources are available. For many, this initial support can be a game-changer. With this certification, these Healthy RC community partners are also now part of a nationwide network of caring people making a difference in teen mental health and their communities nationwide!
