Co-op Placement With Medical Herbalist Susan Elliotson

Susan’s one-acre property is dedicated to nourishing and healing things belonging to the plant kingdom. While doing their Co-op hours, hundreds of graduating students have found an immeasurable understanding of plants as medicine. Pictured above are 8 of over 120 herbs for harvesting that she uses for her patients. Most are organically grown harvested at peak times to capture maximum medicinal constituents, preserved under ideal storage conditions to protect their medicinal activity, and processed to reach and retain maximum medicinal action.
 
What she doesn’t grow, she obtains from reputable sources which ensure that the plants are organically farm-grown, ethically wildcrafted, or are top-grade imported herbs. This is to protect endangered plant species. Prepared products are processed and/or manufactured under the highest industry-approved standards. She creates custom-made blends of herbs dispensed on-site in the form of tinctures, teas, creams, and/or salves.
 
Susan quips that she “aims for one of everything wherever it can be fitted into haphazardly-located beds stuffed with medicinal herbs and perennials in the (vain) hope there will be no room left for weeds!”

Susan leads Co-op students in collecting herbs, before a break for lunch. She can speak academic volumes on the healing properties of herbs and their medicine but her favourite subject is making teas from your own garden! Every Co-op work session begins with a walk. Students follow along as Susan collects herbs to create a one-of-a-kind blend. The tea begins the discussion of the day’s work. Water, transplant, weed, harvest, dry, grind, measure are only a few elements of the work. Susan’s explicit guidance is ever-present in the long and precise process to create therapeutic remedies for her customers and patients. Students leave being able to identify, respect, and use plants from big nature, parks, and their backyard! 
Digital Acceptance Packages Landing For New Students!

New students are receiving their official acceptances. August is not a month of holidays for IHN, quite the opposite. It's one of our busiest times of the year. All hands are on deck to work through the final details for all online and in-class students joining us in September. Stay tuned for re-opening plans in an upcoming IHN This Week. It will be wonderful to have students in classrooms with an eagerness to learn while the student lounge fills with laughter, course chatter and delicious food! For 25 years, IHN’s Applied Holistic Nutrition Diploma Program has provided comprehensive training for students looking to start a career in holistic nutrition. In addition to the extensive curriculum, students receive hands-on exposure to the various components of practice through workshops, student appreciation days, special pop-up events, guest speakers, industry day trips, holistic cooking classes and co-operative placements with professionals in practice. By having access to the minds of the industry’s leading practitioners, both inside and outside of the classroom, students are able to draw on unique pools of knowledge and experiences to help them find their path and to enter the alternative health care industry with the confidence and poise needed to succeed.

Bringing Local Harvest Into School Cafeterias

The Farm-to-School movement sprouted up a few years ago in Ontario and is continuing to harvest food literacy, economic benefits for farmers, and improved behavior in children. The initiative has expanded into over 1200 schools across the country, connecting students with farmers through workshops and hands-on learning opportunities. In an August 31, 2018 article (3 minute read) in The Conversation, “Farm-to-School Movement Takes Root In Canada'', one parent reported, “The students were lined up and peering through the (glass) door. It was like the salad bar lunch was a rock concert and the students were diehard fans.”

It was customary in Ancient Rome to offer a hazelnut plant in the belief that it brought happiness. They have also been revered as a symbol of fertility and life. Originally native to eastern and southern Europe, ancient hazelnut shells have been found by archeologists at different stone age sites in the UK, Germany, and Scandinavia. Doug Householder is the founder of Doug Householder, where he runs both an online and in-person clinical nutrition practice in Toronto, Ontario. With a strong focus on gut health, Doug uses many levers in his practice, from in-home Functional Medicine testing, to supplement recommendations, specific dietary advice, lifestyle changes, and psycho-spiritual development.

Dina Shokri is the founder of Sh Dina Health & Wellness, where she offers both online and in-person nutrition consultations in Oakville, Ontario. She specializes in eating disorders and weight loss. Dina creates healthy recipes and writes nutrition and health articles for a variety of online and print publications. She is passionate about sharing holistic nutrition knowledge with the community.

Danielle Barstow is the founder of Heart & Soul Nutrition, where she runs an online nutrition consulting practice. In addition to consulting, she offers a variety of services, including custom-designed organic juice cleanses, holistic chef services, healthy recipes, and yoga classes. Danielle wants to instill in her clients that proper nutrition and holistic lifestyle factors are essential for optimal health.
