Did you know?
The Satsuma is an easy-to-peel, small bright orange mandarin, with a delicate, sweet flavor.  It is seedless and contains less acid than most other mandarins. 
 
One medium Satsuma is high in vitamin C and has approximately 45 calories, with no fat or sodium.
 
Select a Satsuma that fills its skin, although the skin may be a bit puffy. 
 
While Mississippi has many Satsuma trees, and growing citrus is fairly easy in the coastal counties, gardeners in northern parts of the state can grow them as well.  Check out the Extension publication "Growing Citrus in Containers in Mississippi."  It is available at msucares.com  and is a great guide for successfully growing citrus, including Meyer lemons, Kumquats and Key limes!

From the Market to Your Table
 
 
Satsuma Oranges, Dried Cranberries
& Blue Cheese Salad

8 cups (approximately 12 ounces) pre-washed mixed greens
1/2 cup red onion, finely chopped
1/4 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt
1/2 cup dried cranberries
2 Satsuma oranges, peeled & separated
1/4 cup sliced almonds, toasted
4 ounces blue cheese, crumbled
1/2 cup poppy seed dressing or 1/2 cup raspberry salad dressing

1. Place all ingredients except cheese and dressing in a large bowl.

2. Drizzle dressing around inside edge of bowl.  Using tongs, gently toss to coat everything with dressing.

3. Divide salad among four chilled plates and sprinkle with blue cheese.  This salad is also delicious served with spiced pecans and grilled chicken.
