New Season, New Needs!
The seasons have a way of bringing new rhythms to our lives. I think Fall does this more so than the other seasons. Families who have children returning to school find themselves needing to plan and strategize more than they did in Summer. Dinner is one of those reasons! It can be a stress to plan, but it's a great way to connect as a family at the end of a day of separation. Below you will find a recipe for bacon cheddar stuffed chicken breasts. I think you will find them delicious and the best part will be having the family around the table to talk!

Stuffed Chicken Breasts
4 boneless skinless chicken breasts (about 2-2.5 pounds)
8 ounces sharp cheddar cheese, shredded
8 strips of bacon, cooked and chopped
1 onion, caramelized
BBQ sauce, about 11/2C
Trim chicken and thinly slice almost in half (so it opens like a book). Season with black pepper. Place equal of bacon and cheddar on the open chicken breasts and fold them over. Secure with kitchen twine or toothpicks that have been soaked in water for 20 minutes. Brush a little olive oil on the top of the chicken breasts. You may want to add more pepper. Bake at 375 degrees until chicken reaches at least 165 degrees at its thickest point. This can take as long as 40 minutes, depending on how thick the chicken is. Check temperature at 30 minutes, to avoid overcooking. Top with BBQ sauce and place back in the oven for a few minutes to warm sauce. Top with caramelized onions and serve

Cooking Class at Green Bay Botanical Garden

I will be cooking at the Garden on October 18th! I will make a delicious fall meal- spiced pork tenderloin, apple pear compote, and blue cheese walnut salad with maple dijon dressing! Tickets are available through the Garden's website and details are below.
Northwoods Women Fall Retreat!!
This popular weekend get-a-way is back for another FALL EDITION!

Enjoy two yoga practices daily (one active, one gentle), coupled with outdoor nature walks, water sports (pending weather), empowering discussions, and healthy eating options provided daily!
There will be plenty of space and time for you to relax or connect with others! There is a choice to do additional planned activities or just unwind and go with the flow of the day. This place is everything you could need to unplug for a weekend in nature, and all in the good company of other like-minded women!
