Filling Ingredients
2 lbs rhubarb, cut into 1/2 inch pieces
1 and 1/3 cup sugar
1/4 cup flour
1 teaspoon vanilla extract
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
Crumble Ingredients
1 cup flour
1 cup brown sugar
1/2 teaspoon salt
1 stick butter cut into cubes
Preheat oven to 375 F.
In a large bowl mix all the filling ingredients together. In another bowl, mix the flour and salt and add in the cubed butter and mix until the mixture is crumbly. Grease a 9x13 baking pan and pour the filling mixture into it. Sprinkle the crumble mixture on top, try to do this evenly. Bake for 45 minutes, or until the topping is golden brown. This is delicious served with vanilla ice cream.
