Did you know?

Despite a physical similarity and frequent confusion with their names, yams and sweet potatoes are not even distantly related. They are in two different botanical families. Yams are actually related to grasses and lilies.

Sweet potatoes are a Native American  plant that was the main source of nourishment for early homesteaders and for soldiers during the Revolutionary War; while y ams are large, starchy roots grown in Africa and Asia.

Vardaman, Mississippi, is the Sweet Potato Capital  of the World.

From the Market to Your Table
Sweet Potato Pie  - Lea Throgmorton

1 lb Sweet Potato(s)

½ c. butter, softened

½ c. white sugar

½ c. brown sugar

½ c. evaporated milk

2 eggs, separated

½ tsp ground nutmeg         
                                                       
½ tsp ground cinnamon             
 
¼ tsp ground ginger                        1 TBS all purpose flour
    
¼ tsp ground cloves                      1 (9 in) unbaked pie shell

1 tsp vanilla extract

1. Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato and remove skin.

2. Break apart sweet potato in a bowl. Add butter, mix well with mixer. Add sugars, flour, milk, egg yolks, cinnamon, nutmeg, ginger, and cloves. Beat on medium speed until mixture is smooth.

3. In a separate bowl, beat the eggs whites until they are stiff. Fold egg whites into the potato mixture. Pour filling into an unbaked pie crust.

4. Bake at 350° for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up and then will sink as it cools.
