Are Sprouted Grains Really Better For Us?
From the desk of Susan Cutshaw, M.S. Nutritionist
As trends change, many of us consider different types of alternative foods. One of the most common types, grain based food, has been in the spotlight recently due to a close relative - sprouted grains. These grains didn’t sprout out of nowhere though! You’ve probably had it before in certain bread and pastas like... Ezekiel Sprouted Grain Bread. However, the big question is how do you know which one is best for you and why?
Background
Grains are the seeds of several types of plants (like brown rice, wheat, barley, rye, millet, and buckwheat). The edible part of the whole grain contain the building materials necessary to create new plants; the germ, endosperm, and bran. The germ is like the plant embryo and the endosperm supplies food while bran adds additional yummies as the new seed starts to grow.

As conditions change to encourage growth (like temperature and moisture) the sprouting process begins and the food stored in the endosperm begins to breakdown becoming more digestible for the growing plants. Many think it’s good for us too.

Nutritional benefits
Breads made from whole or sprouted grains have similar nutritional components since they both use the whole grain, but there are other benefits from sprouted grain breads.

Studies have shown that compared to whole grain, sprouted grains have a lower glycemic index, more protein, and a higher content of vitamins and minerals.
For example:

  • Making pita bead out of just 50% sprouted wheat flour raises folate by 20%
  • Sprouted brown rice improves fiber content 6-14%, shows increased levels of antioxidants and positively impacts blood glucose levels
  • Bread made with sprouted grain shows a decreases glycemic response
  • sprouted amaranth increases antioxidants between 300-470%

Read labels
Before making a hyperjump to sprouted everything, be careful when purchasing sprouted grain products and remember that 100% whole grains have lots of nutritional value too. Any products with sprouted grains should be found in the freezer or refrigerator section wherever you shop. Read the nutrition and ingredient label to ensure that the product is as advertised.
