Farm to ECE (Early Childhood Education) at New Testament Child Development Center had a great time with Chef Marcus from the NC Cooperative Extension a few weeks ago. They prepared a fresh mixed green salad with peaches, mint and homemade vinaigrette dressing. The salad provided lots of flavor for young palettes, some gave the salad a thumbs up while a few gave it a thumbs down. They had a great time cutting, tossing, slicing and mixing all the ingredients to prepare their salad! Thanks again Chef Marcus for the food prep class!
Alliance for Children has been piloting the Farm to ECE program at New Testament Child Development Center along with Union County Cooperative Extension and Smart Start MASTERS. Children in the program planted seeds, watched the vegetables grow and then harvested and ate the produce in the classroom. They have been hosting visitors from the farming community and taking food ideas home to share with their families.
