CELEBRATING SENIORS AT PESACH
Passover arrives as Spring blooms with yellow daffodils popping up to acknowledge the season of growth and change. We gather with family
and friends to retell the story of the Exodus, recalling our past and celebrating our freedom.

As we reflect on the strength of our ancestors, so too, can we acknowledge the resilience and wisdom of the seniors at our table!

AMAZING PASSOVER MACAROONS
2 (14 oz.) bags sweetened flaked coconut
1(14 oz.) can sweetened condensed milk
2 Tbsp. sour cream
1 Tbsp. heavy cream
1 1/2 tsp. pure vanilla extract
3/4 lb. (12 oz.) bittersweet chocolate, melted

Preheat oven to 325. Line baking sheets with parchment paper. In a large bowl, mix together all ingredients until thoroughly combined (except chocolate). Press dough into a soup spoon or small ice cream scoop and release onto the baking sheet. Bake for 20 minutes. Remove from oven; let cool. Dip one side of each macaroon in melted chocolate and place on a tray lined with wax paper. Refrigerate for 20 minutes before serving.

EGGS REDUCE HEART DISEASE RISK
Eating an egg a day may lower your risk of cardiovascular disease, a study of more than 400,000 adults in China suggests.

Daily egg eaters had an 18% lower risk of dying from cardiovascular disease, which manifests as heart attacks and strokes, compared with adults who avoided eggs, according to the   research   published Monday in the journal Heart.

Commonly called heart disease, cardiovascular disease includes heart failure, arrhythmias and heart valve problems in addition to strokes and attacks. Raised blood pressure, carrying too much weight or obesity, and elevated blood sugar all contribute to the risk of cardiovascular disease, which is triggered by unhealthy diet, physical inactivity, smoking and harmful use of alcohol.

MY PESACH MEMORY
Nancy Heinrich, CEO, Jewish Senior Life: “ One of my all-time favorite Passover memories was when one of my brothers, age 3, managed to get into the Passover wine. At some point, we realized that he was no where to be seen, but we could hear cackles emanating from the kitchen. I think I was the one who found him under the kitchen table, laughing his head off.” 

Rabbi David Polter, JSL Community Chaplain : “On this Seder night, my late father would preside at our family royal Seder table in a kingly fashion... It was a stunning scene that shaped our lives.”

Barbra Giles, Executive Director of Aging Services : “It’s hard to pick one memory from such a special holiday! I have 2 great food memories. My Grandfather used to be in charge of Charoset . He wasn’t a big cook, but he loved to make the charoset.  He used my Grandma’s old Kitchen Aid with the grinder attachment. He would make enough for about 10 families to divide up. Apples, nuts, wine and spices were everywhere. He was a master at making it. I always looked forward to being in the kitchen with him. It always made such a mess, but he made it sooooo delicious. My sister has now long taken over as the charoset chef and we always talk about our Grandpa when she makes it.

I also have fond memories of my mom baking, leading up to the holiday and coming home from school to find 6 sponge cakes cooling all over the house upside down on Coke bottles. The house smelled delicious and I remember trying to understand how the cake never fell out of the upside-down pans on the Coke bottles.”

Marcia Mittelman, Administrator, Meer Apartments : “One of my favorite Pesach memories is the entire family going to my Bubbie’s house before Pesach to wash all the dishes. White towels with a red stripe for the meat dishes and white towels with a blue stripe for the dairy dishes. All the aunts, uncles, and grandchildren would spend the entire day washing and drying dishes. There were 50 people at the Seders including the immediate and extended family members.”
