Our first Chefcitos Cooking Class of the summer was a success! Children enjoyed trying tasty tomato recipes such as Garden Gazpacho. |
|
We had a pleasant visit this month from Janice Newland Bower and her husband Bob Bower. Janice grew up in the Noyes house, and even met Bob for the first time on this very front porch!
Thank you for visiting, Mr. and Mrs. Bower, and we hope to see you soon!

A special thank you to all of our interns and volunteers who have been hard at work this summer, whether that be in the garden or in the outdoor "adventure" kitchen. We couldn't do it without you! THANK YOU!

Employees from Specialty Produce redeemed their Seedling Soirée auction item certificate and enjoyed a meal catered by the Olivewood Gardens staff.

Dairy Free Caprese Skewers
Fresh basil or pesto
1 pint cherry tomatoes (or tomatoes cut in 1" pieces)
1 package extra firm tofu drained and dried of excess liquid
Drizzle of olive oil
Drizzle of balsamic reduction/glaze (optional)
2 tsp lemon juice or apple cider vinegar
1Tablespoon nutritional yeast (optional)
12 small skewers or toothpicks
Salt and fresh ground pepper to taste
Directions
- Prepare the tofu (2 hours before): remove the tofu from the package and cut into 8-9 equal lengthwise strips. Then cut the strips down the center in the other direction to make bite-sized squares. Put the squares between two paper towels and use either a tofu press or two cookbooks/heavy pans to remove any excess moisture. Be careful not to smash or flatten the tofu. Drizzle the lemon juice/Apple cider vinegar over your drained tofu pieces and dust them with nutritional yeast (optional) and salt. Put the seasoned tofu in the refrigerator uncovered for at least 1 hour.
- Thread a cherry tomato onto each skewer, followed by a basil leaf folded accordion style, and finished with a piece of the tofu. If you are using pesto instead of fresh basil, thread the skewers with the tomato and tofu and drizzle the fresh pesto over the skewer.
- Sprinkle salt and fresh ground pepper over your prepared skewers and add a light drizzle of olive oil.
- Lightly drizzle balsamic reduction over the skewers (optional step).
- Be adventurous! Try adding other fruits and vegetables to your skewer like avocado, cucumbers, stone fruits, watermelon, strawberries, and more!
