We started our 13th generation of Cooking for Salud. The participants in this program are embarking on an exciting health journey and becoming part of a greater community of volunteers and community health advocates - the Kitchenistas. We are so inspired by our committed participants! |
The school year has officially begun and we are hosting field trips for students from throughout the County. This year, we are expanding our program to reach more elementary students from the local National School District. We've also hosted children from after-school programs, and schools from the city of Chula Vista and San Diego have joined us for our garden-based nutrition education program. |

Peanut Salsa (Salsa Macha)
Created by Chef Diego Madueño
Yields about 1 ½ cups
Ingredients ¼ cup of peanuts or almonds ¼ cup sunflower seeds 2 large garlic cloves 5 morita chiles ¾ cup olive oil Salt
Directions 1. Chop peanuts and sunflower seeds into small pieces. You can also use a food processor for this step, but be sure not to chop the nuts into a fine powder. 2. Remove the stems and seeds of the chiles. 3. Heat a pan to medium heat and add the chiles and garlic. Cook for about 2 minutes, stirring constantly. 4. Place the chiles and garlic in a food processor and blend until finely chopped. 5. Add everything but the olive oil into a glass container. 6. Pour olive oil into the container. 7. Add salt to taste. 8. Mix salsa together before serving as the oil will separate during storage.
