HAVE YOUR PLASTIC
AND EAT IT TOO

Microplastics, it appears, have taken up residence inside the lowest rungs of the ocean’s herbivore food chain, the tiny plants themselves that nourish sea-dwelling vegetarians like parrotfish. The realization spells trouble for every link of the food chain leading all the way up to humans, whose seafood consumption—including species like parrotfish—has doubled within the last 50 years.
In total, Goss and Jaskiel found that 75 percent of the seagrasses they collected from the Turneffe Atoll contained microplastics.
The findings,
published in Marine Pollution Bulletin
, reveal an entirely new vehicle for microplastics to travel into the food chain. Although it’s already been shown that some marine species ingest plastics themselves—passing those plastics up the food chain through their predators—until now it wasn’t thought that vegetarian sea creatures were likely to be a point for plastic to enter the food chain.
Microplastics are literally woven into the clothes we wear. Garments made of synthetic materials like nylon, polyester, acrylic, and spandex (anything not made of pure cotton or wool, basically) contain hundreds of thousands—if not millions—of microplastic fibers. Why does that matter? Each and every time we do a load of laundry, tens of thousands of microplastics are drained out with the wash water. Plastic waste, flowing through our plumbing systems and too small to be filtered out by water treatment facilities, is introduced to waterways which, eventually, all lead to the ocean.
If Goss and Jaskiel’s seagrasses reveal anything, it’s that microplastics are persistently finding a way right back to us, the species that launched them into the oceans, through the circle of life, by arriving back into the bellies of humans who eat seafood. And so, the cycle goes on. Plastic, once hailed as a wonder material, is now inescapably part of our world—and by extension, part of us.

Heartburn drugs might bring allergy woes

New research from Austria found that people who use drugs that suppress stomach acid were almost twice as likely to need drugs to control allergy symptoms.
And people over 60 who used these drugs were more than five times as likely to also need an allergy medication, the study reported.
“Many people have gastric (stomach) complaints and many people take anti-acid medicine. The longer the treatment with these medicines, the higher the risk of allergies,” said study senior author Dr. Erika Jensen-Jarolim, a clinical immunologist at the Medical University of Vienna.
How might these two conditions be connected? Jensen-Jarolim said that, normally, the acidic environment in the stomach helps break down food-derived proteins that can cause allergies.
But if you take acid-suppressing drugs, the food you eat isn't broken down into small enough pieces. Intact allergens are sent to the intestine, where they can cause an allergic reaction and inflammation.

Vegetable Latkes
Although latkes made with vegetables like carrot, turnip, daikon radish and zucchini will never be quite as crispy as potato latkes, they’re darn good in their own right. The flavor of each vegetable is mild enough that you’ll still feel like you’re eating a latke, yet the latke is transformed into something new and interesting. Zucchini latkes are mildest of all, the carrot and turnip are slightly sweet, and the daikon version has just a hint of spiciness.
Notes: These latkes will work with many combinations of vegetables, especially root vegetables. To make the dish lower carb, you can swap out the sweet potato or carrot with turnips or rutabaga. Use multiple paper towels or a good hand towel to ring out moisture from the shredded vegetables, especially vegetables like daikon and zucchini. This will keep your latke batter from turning watery. To make the shredded vegetables either use the large holes on a box grater or food processor with a large grate attachment.
Ingredients:
- 1 cup shredded daikon radish
- 1 cup shredded zucchini
- 1 cup shredded carrot
- 1 cup shredded Japanese/white sweet potato
- 2 Tbsp. almond flour
- 1/2 tsp. garlic powder
- 1/4-1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 extra large egg or 2 medium eggs
- ¼ cup Olive Oil
Instructions:
Preheat your oven to 400 ºFahrenheit. Place a seasoned cast iron skillet in the oven to heat.
Use a towel to squeeze out the shredded vegetables. In a large bowl, combine the shredded vegetables, almond flour, garlic powder, salt, and black pepper. Crack the egg and mix it into the vegetable mixture. Allow the mixture to rest for 1 minute.
Place the skillet over medium high heat and add 2 tablespoons of oil. Once hot, add a scoop of the vegetable mixture to the skillet and gently flatten and shape it so it’s a slightly flattened patty. Repeat 2-3 more times so the skillet has 3-4 patties. Allow the latkes to fry for 1-2 minutes on each side.
Gently use a spatula to remove the latkes and place them on a parchment-covered sheet pan. Add the remaining oil and allow it to heat before repeating the above steps with the remaining vegetable mixture.
Place the sheet pan with the latkes on it in the oven for 10-12 minutes. Allow them to cool before removing them from the pan. Enjoy on their own or with your favorite sauce. (they are great with a sour cream or yogurt-based dip)
