Buttermilk Avocado Soup
with Crab Salad
(By Soux Chef Andy Hirth)
Soup
2 Avocados
1 Lime, Juiced
3/4 cup Buttermilk
1 cup Veg Stock, cold
2 tbs Cilantro, chopped
1 Green Onion, chopped
3 Garlic Cloves, chopped
1/4 cup Fennel Bulb, chopped
1 Jalapeno, seeded, chopped
Salt and Pepper to taste
1.) Blend all ingredients
2.) Strain through fine mesh strainer
3.) Hold cold
Yields 4 Cups of Soup
Salad
2 tbs Red Pepper, fine julienne
1 tsp Orange Zest
1/2 cup Crab meat
1 tsp Chives, minced
2 tbs Fennel Bulb, fine julienne
1 tsp Lime Juice
Salt & Pepper to taste
1.) Combine all salad ingredients in mixing bowl
2.) Carefully ladle soup into chilled soup cups
3.) Carefully place 1/4 cup of salad on top of soup

Community Outreach
The staff of the Lynnwood Convention Center held a book drive in the form of a friendly departmental competition to benefit Early Head Start! Congrats to the Operations Department for donating the most books, and thanks to everyone who participated!

Convention Center Staff recently volunteered their time to clean up Heritage Park in Lynnwood and they had a blast! Thanks to all involved!
