Finally, the warm weather has arrived! Our winter seemed to last a very long time and I am in need of sunshine!
 
Thank you to everyone who has been waiting for the restoration to finish. All major work has been completed and we are just following up with some minor projects now. 
 
June is National Men's Health Month. For all of the men out there, remember to practice good health. Take an active role in your health by visiting the doctor, dentist and optometrist as well as practicing good nutrition habits and exercise. Healthier men live happier, longer lives. On Friday, June 15, NRC will Wear Blue to show our support for men's health . Participate and you will receive a small gift!


Etiquette Rules Reminder:
  1. Put away all weight plates and dumbbells after use.
  2. Any equipment that you move for your workout routine needs to be put back in its original location after use.
  3. Please spray equipment cleaner into towel and then wipe down exercise equipment. Do not spray onto cardio monitors.

Sun Dried Tomato Basil Pinwheels

Prep: 5 mins
Cook: 15 mins  |  Bake: 40-45 mins
Servings: 6 

Ingredients
  • 1/2 cup - sun-dried tomatoes
  • 8 ounce - cream cheese, low fat
  • 1/4 cup - spinach
  • 2 clove - garlic
  • 1/4 ounce - Parmesan cheese
  • 0.18 teaspoon - salt
  • 2 medium - tortilla, whole wheat
  • 15 leaves - basil, fresh
Directions:
  1. Dice the sun-dried tomatoes. Add to a bowl with the softened cream cheese, chopped spinach, minced garlic, grated Parmesan cheese, and salt. Stir thoroughly to combine.
  2. Spread filling on tortillas (you can use a third if needed).  Try to spread the filling all the way to the edge of the tortillas.
  3. Top with fresh basil leaves and then roll up tightly.
  4. Use a serrated knife to slice each roll into 1 inch pieces. Cut the roll seam side down to help the pinwheels stay together.  Enjoy!
