Renovation Update & Get Moving this May!
From Ande Masoncup, Asst. Superintendent of Rec

Spring is finally here! Let's start to welcome all the new beginnings,

including the final stage of the fire renovation. The whirlpool, sauna and locker rooms are almost ready for use. Thank you to everyone for waiting so patiently for this final completion.

There is a constant buzz of activity here at NRC. Participants using the minigym, fitness center, attending group fitness classes, swimming in the pool and playing tennis. Anyone that made a New Year's Resolution has turned it into a habit. That's great!

May is National Physical Fitness and Sports Month. Keep your eyes peeled for some fun activities or information regarding the importance of physical activity.

Etiquette Rules Reminder:
  1. Put away all weight plates and dumbbells after use.
  2. Any equipment that you move for your workout routine needs to be put back in its original location after use.

Healthy Baked Cavatelli

Prep: 30 mins
Cook: 15 mins  |  Bake: 40-45 mins
Servings: 8

Ingredients
Directions:
  1. Preheat oven to 350 degrees F. Cook pasta according to package directions, omitting any salt or oil. Drain; set aside.
  2. Meanwhile, in a very large skillet cook sausage, eggplant, mushrooms, sweet pepper, onion, and garlic over medium heat until sausage is browned and vegetables are just tender, stirring to break up sausage as it cooks. Drain off any fat. Add tomatoes, tomato sauce, dried basil (if using), dried oregano (if using), salt, and black pepper. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes, stirring occasionally. Stir in fresh basil (if using) and fresh oregano (if using).
  3. In a very large bowl stir together the pasta and sausage mixture. Spoon mixture into a 3-quart baking dish.
  4. Bake, covered with foil, for 35 to 40 minutes or until heated through. Uncover; sprinkle with cheese. Bake about 5 minutes more or until cheese is melted.
