Embrace the Change
Foodservice operations have been slow to embrace the changes of e-commerce. E-commerce is driving structural changes to traditional retail and is growing rapidly in our industry. Pre-order and delivery apps are being integrated into all our customers lives. Order fulfillment strategies are now core to foodservice operations. Planning must bypass the friction of using the same payment or pick up processes of traditional operations. Below are some examples of how creative fulfillment techniques can be designed or implemented to increase the satisfaction of the customers journey.

Kaitenzushi restaurants typically use plates of different colors and patterns to indicate their costs. A button above the conveyor belt can be used to call the attendants to count the plates. Some restaurants have a counting machine where the customer drops the plates to be counted automatically, or they use RFID tagged plates and just count each stack at once with a special reader.
|
Cafe X is a company in San Francisco that builds robotic kiosks to serve locally roasted coffee really fast. The brains of the cafe are a pair of highly automated espresso machines and a friendly industrial arm that dances and waves when it's not filling orders. The robot can prepare 120 drinks an hour. No fuss, one-tap ordering and cashless payments reduce wait time to about 10 seconds. It has an easy to use app for ordering.

Little Caesars ‘The Pizza Portal’ is a machine that lets customers skip the line, grab their pizza and go. Pizza lovers need only download the app to order and pay for their food. Next, they'll receive a 3-digit or QR code. Once at the store they need to enter or scan the code to open a self-service hot box at the shop, skipping the line and finishing their transaction in a few seconds.

Mike Stack, a former President of FCSI, passed away on September 22nd after battling a rare kidney cancer. A celebration of life will take place at the end of October in Bozeman, Montana.

My Journey to Citizenship

Last month, I had the tremendous honor of becoming a U.S. citizen after moving to this country almost 17 years ago. As I sat through my oath ceremony, I couldn’t help but reminisce about my journey from being an international student to a foodservice consultant. It was no easy accomplishment with a lot of ups and downs, sacrifices, rejections and it tested my faith and ability in myself and my career to a great extent. I’m extremely grateful to all my peers and colleagues who gave me a chance, supported and trusted me wholeheartedly through each step of this journey.

FCSI The Americas Attends
CFESA Conference 2019
Washington, D.C. - September 13-14, 2019
Bill Caruso, FFCSI (PP), FCSI TA Chair, and Kimberly Kissel, FCSI TA’s Director of Education, attended the 2019 CFESA Conference in Washington, D.C. this month. All five families were represented (CFESA, MAFSI, FCSI, NAFEM, FEDA) in a panel discussion to discuss the role of each group within the foodservice industry. They also discussed how beneficial it would be, not only to understand the role of each group, but also to make efforts to communicate and work with each other. Ideally, there would be a clear channel of communication with each type of provider, thereby offering the best solution for and satisfaction of the client. Members of the panel included: Moderator Joe Carbonara (FE&S), Bill Caruso (FCSI), Kevin Eaton (MAFSI), John Schwindt (CFESA), Joe Carlson (NAFEM), Kevin Fink (NAFEM), and Michael Keck (FEDA).
The conversation continued after lunch in roundtable discussions to explore ways to increase communication and collaboration, as well as how to tackle any hurdles currently in place.
Overall it was a great conference, and FCSI TA appreciates CFESA’s ongoing efforts to bring together the five families to find ways of working together more efficiently to serve the client, as well as finding ways of attracting new people to the industry.
