HAPPY WORLD VEGAN DAY!
In honor of World Vegan Day on November 1 — and Thanksgiving later this month — the folks from HEX Ferments were kind enough to share with us their vegan version of Baltimore Thanksgiving Sauerkraut to, in turn, share with you. Make a batch to share with friends & family, or if you're short on time, stop by their booth at the Market on Sunday and purchase your favorite fermented foods packed with probiotics. Click below to see their full product lineup.
BALTIMORE THANKSGIVING SAUERKRAUT

  • 1 tablespoon Pompeian extra virgin olive oil
  • 1 small local onion, finely diced
  • 2 local apples, medium chop
  • 1 can of local Pilsner or Lager-style beer (Fest Beer from Union Craft is what HEX will be using this year)
  • 15 oz jar of HEX Sauerkraut
  • 1 cup vegetable stock
  • 2 tablespoons Dijon mustard (optional)
  • 1 tablespoon caraway seeds (optional)
  • 1 tablespoon brown sugar (optional)

Heat olive oil in a medium pot over medium heat, add onions & apples. Add a pinch of salt & pepper and cook until the onions are translucent. When onions are done, add the beer and use a wooden spoon to scrape the brown bits from the bottom of the pan. Once deglazed, add entire jar of HEX, stock, the mustard, caraway seeds, and brown sugar. Simmer until the liquid is reduced by a third. Simmer longer for a thicker kraut. Serve warm. Recipe makes enough for eight feasters!
