Emmer
An ancient hulled wheat and one of the first cereals ever domesticated in the Fertile Crescent. Over the centuries, emmer was gradually abandoned in favor of hull-less and higher-yielding varieties of durum wheat. Emmer is known as farro in Europe and is staging a comeback as a gourmet specialty as both a whole grain and flour. Farro is a catch-all Italian term for “ancient grains”. Emmer is considered the original farro which is why we refer to our Emmer as “Emmer Farro”. Our Organic Semi-Pearled Heirloom Emmer Farro comes to us from a farm in Montana. High in protein and low in gluten, emmer farro is an heirloom grain with a simple structure.
While whole grain emmer farro takes more than an hour to cook, semi-pearled will be ready in about 20 minutes. Emmer farro’s sweet nutty flavor is a natural fit for pancakes & waffles. Cooking directions: for each cup of emmer farro, bring 2 cups of water to boil. Add emmer farro and reduce heat. Simmer for 15-20 minutes, or until desired chewiness.Try in salads, pilafs or soups.

Kamut®
This ancient wild wheat has been found along the Fertile Crescent (the region of the Nile, Tigris, and Euphrates Valleys in the Middle East). Along with barley, Kamut® (pronounced Kah-moot) is considered one of the earliest grains known to human civilization.
Older wheat varieties like Kamut® tend to be easier to digest than today's hybridized crops. The changes made by hybridization have far outpaced the development of our digestive systems, making it difficult for some to digest modern wheat.
Kamut® wheat is two to three times the size of common wheat with 20-40% more protein and a higher content of lipids, amino acids, vitamins, and minerals. Kamut® is an excellent source of magnesium, niacin, thiamine, and zinc, and a good source of iron and riboflavin.
Rich, buttery flavor and chewy texture, Kamut® is great served hot or cold. Try cooked Kamut® mixed with rice, black beans, cilantro, garlic, red pepper, and tamari, or sprinkle on a salad for a hearty meal.
Cooking instructions: Add 1 cup Kamut® to 3 cups boiling water. Reduce heat to low and simmer for about 2 hours. Or use a pressure cooker and cook for 35 to 45 minutes.

Announcing San Juan's newest winery!
Chris and Marti stopped by the co-op this Thursday with their brand new release from their brand new winery, Archipelago Beverage Company. They are making one wine, an organic pet-nat Siegerrebe out of Madrone Cellars winery. Chris used to be the winemaker at San Juan Vineyards before the ownership change, so he knows a few things about working with the unusual grape varieties we grow up here. When that job ended they knew what they wanted to make: an organic, cloudy champagne style, aromatic, dry white from local organic grapes. They showed it to us first, and it's lovely. Lightly cloudy from the bottle conditioning, fine bubbles, bright, rich tropical fruits with aromatic and floral notes on the nose but bone dry in the mouth, with a clean, mouthwatering acidity leading to a savory, creamy finish.
