The SmokinTex drying system sits on top of any SmokinTexsmoker, over the smoke hole. It has a 12 volt exhaust fan that draws the air from the bottom drip hole up past the wood box and thru the jerky, drying it.
Stainless steel cart made especially to hold the SmokinTex Pro Series models 1400 and 1100 smokers. Has fold down side shelf and stationary shelves for easy storage of wood and accessories.
Perfect for fish filets, boneless chicken or turkey breasts. Anything requiring a tighter mesh to provide additional support and/or a non-stick surface.

I bought a SmokinTex smoker from you guys a while back. My friend Luke Clayton had sent me your way. I use it a lot and wanted to share some of the results.
Feral hogs can be difficult to get tender and juicy as compared to domestic. It takes a much different technique. Because of the ability to precisely control heat, the SmokinTex works very well for feral hogs.
In this case, I had been working on making ham. Very few folks do it these days. Luke says it is a lost art. Regardless, I have worked on it for some time and have the process down. Feral hogs make some of the best ham you will ever eat. Hope you enjoy the pics."
