It's been a little over two months since we've been together in the same physical space, and in many ways it feels like a year. Despite our distance we have found a million ways to reach out and to reach in. This Sunday we will celebrate all the ways we connect with the world around us and within us.
 
This Sunday we will also celebrate the many thresholds that continue to permeate our lives despite our distance.

Families, please join the Children and Youth Religious Education program for Virtual CYRE this Sunday, May 24, at 3 p.m. We will go on a Memorial Day Weekend Adventure together. Let's have some fun! Come dressed in a costume that represents where you'd most like to go on an adventure.

This week I'd like to share a meditation in our hymnal from Unitarian Universalist William Henry Channing:

To live content with small means;
To seek elegance rather than luxury, and refinement rather than fashion;
To be worthy, not respectable, and wealthy, not rich;
To study hard,think quietly, talk gently, act frankly;
To listen to stars and birds, to babes and sages, with open heart;
To bear all cheerfully, do all bravely, await occasions, hurry never.
To let the spiritual, unbidden and unconscious, grow up through the common.
This is to be my symphony.

This Sunday, May 24, our Worship service will be in celebration of transitions that are happening during this time of physically distancing: graduations, weddings, births, funerals, etc. 

As life marches forward, despite our distance, it is important to take the time to honor and celebrate the lives and milestones that make up the human experience. 

The Worship Committee invites you to share photos of loved one who are graduating (all ages and stages of graduation are welcome), new babies (pregnancy pictures welcome), friends and family we have lost but been unable to properly celebrate, weddings, etc.  Photos will be used in a slide show during our service.

Little Food Pantry Needs You
The outdoor food pantry is being heavily used with an estimated 12 visitors per day, both families and homeless. YOU can help keep it stocked by signing up on the SignUp Genius.  

Items to consider buying include the following: 
c anned meats, cereals, mac and cheese, pasta, peanut butter and jelly, ravioli, energy bars, fruit cups/cans, pasta and alfredo sauce, soups, packets of dried potatoes, beef stew, canned milk, instant ramen, baby wipes, peanuts, canned veggies, beanie weanies, oatmeal, onions, bananas, potatoes, etc.
 
Please  contact the church office if you would like to schedule a drop-off and request assistance. Or feel free to stop by and stock the pantry on your own. It would help if you checked the SignUp Genius and maybe come on off-days. There is a black storage box located just outside the door in which you can place extra pantry supplies. Thanks to everyone who has helped keep the pantry stocked for our hungry neighbors.

Cooking in Hard Times

This week Audrey Fox shares her recipe for Coffee Chip Muffins. Audrey says, "I occasionally like to bring these muffins to CYRE Committee meetings."

Coffee Chip Muffins from Vegan Brunch

Makes 12 muffins.
  • 1 cup almond milk (or your favorite non-dairy milk)
  • 1 heaping tbsp. instant coffee crystals
  • 1 tsp. apple cider vinegar
  •  2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup canola oil
  • 1 tsp. pure vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 375 F.
  2. Lightly grease a muffin tin.
  3. In a large measuring cup, measure out 1/2 cup of the milk. Stir in the coffee crystals, and mix to dissolve. (A few undissolved crystals are okay.) 
  4. Stir in the rest of the milk and the vinegar, and set aside. 
  5. In a large mixing bowl, stir together the flour, sugar, baking powder, and salt. 
  6. Make a well in the center, and add the milk mixture, oil, and vanilla. Mix together until the batter is just moistened, being careful not to over-mix. 
  7. Fold in the chocolate chips. 
  8. Use an ice cream scoop to drop the batter into the muffin tin, filling it about three-quarters full.  
  9. Bake for 22 to 26 minutes, until a knife or toothpick inserted through the center of a muffin comes out clean.  

Let cool a bit until you can remove the muffins and transfer them to cooling racks to cool the rest of the way.

The Community lit a candle of Remembrance: Candle of Remembrance: for Kenneth Barry, who passed away this week at age 95. Ken and his late wife Jo were active members of UUCH for about 40 years. He was father to many sons, a Navy veteran of WWII and Korea, a free thinker, and man with many stories -- he was a good guy and interesting person.

Deb Delacey lit a candle of Joy:  My son, Vincent ,  and his fiancée, Crystal, are joining us from Las Vegas!

Paul and Bridgit De Moor lit a candle of Joy: Hello, everyone! Today is our 7th year anniversary! Yeah! We made it past the 7-year itch!

Nancy Finley lit a candle of Concern: Concern for all those in our community and country that are getting so angry at each other for how we react to this virus. May we all find peace and ways to care and understand each other.

Vincent lit a candle of Joy: A great joy joy for my moms; siblings Ana, Richie, Benjamin; and my fiancée, Crystal.

The Hitts lit a candle of  of Joy and Sorrow: Our granddaughter, Adah, graduated from high school virtually this weekend. It was bittersweet because we couldn't be there in person.

Rachael Schieb lit a candle of Sorrow: For my tribe member who died last Tuesday from the COVID-19 virus. In NYC, he had been in a ventilator for two weeks when he contracted pneumonia. Peace to a man that supported his people.

Kathy Fisher lit a candle of Double Joy: Yesterday I held my first ever virtual spring recital with my students. They did a beautiful job! And it was also my birthday. 

Rita Scholes lit a candle of Gratitude: Thank you for allowing me to share your service via Zoom (thanks to Angela). Peace and love to all.

Angela Arnold lit a candle of concern: For my cousin Jennifer in Austin, TX. She is a physician's assistant and got a staph infection and cellulitis on her face -- from wearing a mask. Be careful, everyone. Keep that mask clean, and keep our medical community in your hearts.
