Our Navajo Nation Student
Blanket & Clothing Drive
On Monday, December 14th a truckload of food, cleaning, and health supplies was delivered to the Navajo Nation. Many thanks to all of you who contributed funds, shopped, made the delivery.   As our northern neighbors struggle to stay strong in the face of COVID 19, cold weather, and scarcity of resources, they have expressed appreciation for this team effort that reflects our compassion and active care in the broader community

Earth Justice Ministry Announcements
Earth Justice Ministry learned that the ACC has set two more dates in January for public comment by telephone about the request by APS for a rate hike.
You can go to https://www.phoenixuu.org/aps-rate-hike-public-comment/  to learn more about how to comment and/or write the commissioners about not allowing the increase, and about forgiving the debts (electric bills) for those hit hard by COVID.

Eat Plants for the Planet
We are still collecting recipes for our eventual cookbook. Please send your recipes to uuejministry@gmail.com

Eating less meat and animal products helps clean our air. Eating locally grown produce, like cacti, also helps reduce pollution from transportation.
Nopales, or prickly pear cactus pads, are sold at some stores.

One recipe is  Nopalito and Eggs
1 1/2 T. butter
3 T finely chopped onions
3 T diced nopalitos (available in jars or in produce section)
6 eggs (or egg substitute)
salt and pepper, and Salsa to taste
Heat butter in a frying pan large enough for 6 eggs. Saute onions and nopalitos until lightly browned. Add eggs beaten with a little water and S&P.
Fry until done. Serve with salsa, toast or tortillas.
