Conceived in a dream (yes, really!) by founder Mary Keehn, Humboldt Fog is a masterpiece that has paved the way for soft-ripened goat cheese in America. Each handcrafted wheel features a distinctive ribbon of edible vegetable ash. Flavors include buttermilk and fresh cream, complemented with floral notes, herbaceous overtones, and a clean citrus finish. As Humboldt Fog matures, the creamline develops and the flavor intensifies.

Tarentaise by Spring Brook Farm (Vermont)
Tarentaise is a raw milk, semi-hard, Alpine-style cheese made from the milk of Spring Brook Farm's own herd of Jersey cows. This acclaimed cheese is aged for a minimum of nine months. The flavors that develop range from a complex brown butter, nutty profile to bright red and tropical fruits, depending on the season.

The texture of Tarentaise is dense with a nice bite, and is perfect for dishes that call for a cheese that melts well. Make a creamy comfort food like potato gratin or fondue with Tarentaise to start your Fall off with a standout treat.
