This week's class was all about "No Cook" Sauces. These sauces are perfect in warm weather especially if they top grilled meat, chicken or seafood. Leave the heat outside.

I'm sharing the Grilled Top Sirloin with Gazpacho Salsa recipe this week. The combination together is delicious but the salsa is also good served as a dip with pita chips. Or instead of steak try it over grilled chicken or salmon!

The Reverse Grilling technique for the steak just flips the usual order of searing first and then roasting. Instead you first cook the meat in a very low heat before searing the outside on a super hot surface. This creates a very evenly cooked steak with the same pink color running from top to bottom and a beautifully seared outside edge. Try it sometime!

The Sicily Trip is a go! You can still contact Merlene to join us. See all the contact info below in the black box. I'm so excited about this trip. Lots of my family are joining us and we're taking a few days to visit the town my great-grandfather was born in before the tour begins. So fun! Then we'll be exploring as many sights and flavors we can all around the island of Sicily.

The Mediterranean Cruise is getting so close now. We're all making our final payments and finalizing our tour picks. I'm working on my demo menu and my talk about the cuisines around the Mediterranean. I just bought this new kind of pillow-scarf-thing that actually wraps around your neck and holds your head up. I'm hoping I might actually sleep on the flight over!

GAZPACHO SALSA ON REVERSE-GRILLED TOP SIRLOIN
WITH A SMOKED PAPRIKA RUB         Serves 4 to 6.

Steaks:
2 1/2 lbs. top sirloin (1 1/4 to 1 1/2 inches
thick)
8 cloves garlic, minced
1 T. olive oil
1 T. fresh lemon juice
2 tsp. smoked paprika
1 tsp. dried thyme
1/2 tsp. coarsely ground black pepper
1 tsp. coarse salt

Salsa:
6 T. extra-virgin olive oil
2 T. sherry wine vinegar
3 cloves garlic, minced
1 T. smoked paprika
1 1/2 tsp. coarse salt
3/4 tsp. freshly ground black pepper
3 medium tomatoes, cored, seeded
and diced 1/4 inch
1 small cucumber, peeled, seed
and diced 1/4 inch
3/4 cup coarsely chopped
   Kalamata olives
1/2 red bell pepper, diced 1/4 inch
1/2 yellow bell pepper, diced 1/4 inch
1/2 cup finely chopped red onion
3 T. chopped Italian parsley

1. Preheat oven to 250 degrees. Combine the garlic, olive oil, lemon juice, smoked paprika, thyme and pepper  in a small bowl. Pat dry the steaks and them rub them generously on all sides with the spice mixture. Let steaks stand 1 hour.

2. For salsa, whisk olive oil, vinegar, garlic, smoked paprika, salt and pepper in a large bowl. Add all remaining ingredients and toss to coat. Can be made up to 8 hours ahead and refrigerated or let it stand 1 hour at room temperature.

3. Line a baking sheet with foil and place a rack on top. Season steaks well with salt and set on the rack; for medium rare steaks, roast in the oven until the steaks reach 130 degrees internally. When the steaks reach 115 degrees preheat your grill to high. Once the steaks reach 130 degrees transfer them to the grill and cook for about 1 minute on each side. Remove and let rest 10 minutes before slicing across the grain into thick pieces.
