New UPS Charges
Starting January 1st UPS instituted some changes that will affect our shipping charges. Prior to this, any package over 70 pounds incurred a $20 surcharge. After the 1st any box over 50 pounds will incur a $24 surcharge. We are working hard to figure out how to ship your meat the least expensive way. Please note that FedEx made the same changes, so switching will not help the situation in any way.

The boxes we use to ship are a factor, and balancing between paying the surcharge or going to a second or third box is challenging. Please know that we are looking at each order carefully and doing our best to make the choice that will cost you the least.

Since our boxes weigh about 5 pounds each, on average, we have to take that into account as well. This summer, when we will be adding dry ice, that will also factor in, not to mention ice packs. At times we may shave your orders a little if it means saving you the $24 charge. At other times we will just load our largest box up to the top and pay the surcharge, if in the end we can save over the cost of another box and additional UPS charges. 

Know that we do our very best to keep your shipping charges down. We offer a 10% discount on $300 orders in the hope that this will offset much, if not all, of your shipping costs. As I am sure you are aware, our meat prices are much lower than our competitors, some of whom offer "free"(?) shipping. We hope that our system actually keeps both your meat and your shipping costs affordable and competitive. If you have any suggestions as to how we could improve this we would appreciate hearing from you. As we move forward just know we are looking out for you every way we can.
Allan's Shoulder Update
I shared with you last month that we were involved in an accident on our way to Houston, and that Allan hurt his shoulder. As it turned out, the tendon over the top of the shoulder was completely severed, and 2 other tendons required repair. He had surgery a few weeks ago, and while somewhat traumatic and painful, he is on his way to recovery. Looks like he will be 3 to 6 months recovering, and unable to do most of the chores he is used to doing. We have hired some help to get us through. That is always a challenge and we are hoping it works out. So far, so good.

The worst is that the driver who caused the accident was uninsured. Ugh! We have insurance to cover, but as any of you who have dealt with insurance companies know, you find out after the accident just how good your insurance is. The repairs to the truck have gone well, but we are hoping that the "lost wages" part of the insurance will pay for the help we need to get through. Seems reasonable, but who knows. Your prayers for his quick healing, as well as a satisfactory settlement for lost wages, would be greatly appreciated. I will keep you posted on his progress.

Allan's brother Glenn and his wife Becky came for a visit in January. We enjoyed their visit so much, and Glenn's help prior to Allan's surgery was above and beyond - it got us through. Becky took some really nice photos of the ranch that I wanted to share with you.

Fish Tacos
While Glenn and Becky were here I tried a Fish Taco recipe that my brother, Ed, sent me. They were easily the best fish tacos that any of us had ever eaten. SOOOO delicious. One day soon I want to try the same recipe with beef, and then pork. Who knows, I might even try it with lamb. And of course, chicken tacos made this way should be exquisite.

In Closing . . .   
We have had a lot of good moisture this winter, insuring adequate irrigation water this summer. The downside is that everything is muddy, muddy, muddy. Deep mud. So difficult to get the trailers, and even the tractor, around the ranch. Thick mud on your boots, mud in the house, mud everywhere. We are very grateful for the moisture, and while we are not complaining, we are looking forward to drier ground. 

Already I am thinking about the greenhouse and outside garden. Maybe by the end of this month I will try to get some seedlings started in the greenhouse. I usually wait till the end of March, but I am wondering if I might be able to get a little jump on a few things. Lots will depend on the long range weather forecast. Last year we used toilet paper tubes to protect the seedlings and it worked really well. I have a bundle saved and ready to go. LOVE to recycle!
