UPDATED: UW-Parkside Mask Requirement ā
Summer Term
The following indoor mask/face covering guidelines are in effect until further notice:
- Masks/Face coverings are required inside campus buildings for unvaccinated individuals. Masks may be removed when eating, alone in a private office, and/or in oneās residence hall room.
- Masks/Face coverings are required in classrooms/labs for all participants (vaccinated and unvaccinated). Classrooms/labs are defined as spaces being used for academic, in-person instruction.
- Masks/Face coverings are optional for fully vaccinated individuals inside campus buildings (except in classrooms as defined above).
- Participants of youth camps must follow mask/face covering policies as directed.
We acknowledge that the wearing of a mask/face covering is NOT an indication of oneās vaccination status. Individuals may choose to wear a mask due to personal choice, underlying health conditions, and/or for the protection of vulnerable family members.
Remember, you can get vaccinated by calling the Student Health & Counseling Center at 262-595-2366 to make an appointment. Or you can visit https://www.vaccines.gov/search to find a vaccination clinic near you.

Struggling with Summer Meals?
By Kristie Carpenter RDN,CDN - Wellness/Performance Dietitian
Wouldnāt you agree that summer meals have a different vibe? The spicy warm chili is definitely not on the menu and the heavy meat lasagna is just too much. Donāt forget how the summer afternoons entice you in for an extra activity delaying dinner. Now add in the possibility of kidsā camps or activities and you have a revolving kitchen door. How can you embrace the summer vibe and nourish those you love?
First, at least two meals a week should be etched in stone for a sit down āat the tableā meal. Keep an open mind when scheduling these because breakfast time or a midday lunch can often be the best. Holding onto this important tradition is a foundation for many.
Second, the refrigerator will be the heart of your kitchen and when members of your household open the door, they should literally be encouraged to grab an option that will give them energy. This can be accomplished by prepping fruits, veggies, and simple meals to have ready to grab in small containers such as mason jars. Imagine your fridge full of cubed pineapple, fresh blueberries, carrot coins and cucumber sticks all in clear containers in a serving size ready to grab. Add a main dish like tacos, sub sandwich, or pesto pasta and your whimsical dinner is ready for the table or picnic blanket in the yard. This absolutely does take time to prep, so why not make the most of your time by not watching your favorite show sitting down, but bring that device into the kitchen along with some helpers and prep while watching (watch your fingers too š).
If your wondering what this fridge might look like:

If you are missing that warm chili here is summer spin on that classic recipe.
Chiliān Salsa ā Almost all the same ingredients as chili itself, but light and refreshing on a summer day.
- 2 cups chopped vine-ripened tomatoes
- 1 cup canned black beans, rinsed, drained
- Ā½ cup diced red onion
- Ā½ jalapeƱo seeded, diced (optional, you decide on heat)
- Ā¼ cup loosely packed fresh cilantro
- Ā½ Tbsp fresh chopped garlic
- 3 Tbsp fresh lime juice (worth the squeeze)
Season with salt & pepper to taste
I would suggest āSCOOPā tortilla chips here because you can get a lot of veggies in that scoop tortilla chip keeping the chip intake to a minimum or use cucumber slices, carrot sticks, or celery.
