Healthy Mediterranean Fats
One of the pillars of the Mediterranean Diet is extra virgin olive oil. It’s a heart healthy fat–a “good fat"–that helps to make Mediterranean cooking so delicious. The good news is there are a number of other healthy Mediterranean fats that also contribute to great tasting, healthy Mediterranean dishes and meals: tree nuts, peanuts, fish oils, and avocados. 
The beautiful presentation of this meal is well suited for hosting friends and family. Best of all, this recipe is completely plant-based. The peanut filling contributes plant protein and a creamy, hearty texture.

You can, of course, use this fragrant marinade with just about any kind of seafood, but the flavors work especially well with salmon. Include some greens and one cup of your favorite whole grains per serving for a balanced meal. We served it here with farro.

A tartine, an open-faced sandwich, is a common mid-day meal in France. This avocado-topped version on whole grain toast is creamy, nourishing, and full of healthy fats! We love it with za'atar but feel free to get creative with seasonings.
