On August 1, 1876, some 13,000 years after the first inhabitants arrived, U.S. President Ulysses S. Grant signed a proclamation admitting Colorado to the Union as the 38th state.  Celebrate with us at NATIONAL PARK VILLAGE, a Colorado native!

WHEREAS, the Colorado Proud program commemorates its 20th anniversary helping more than 2,700 Colorado companies market their food and agricultural products; and 

WHEREAS, Colorado Proud encourages consumers to identify and buy locally produced foods, which supports local businesses and the state's economy; and 

WHEREAS, the Colorado Proud program makes it easier for Colorado retailers, grocery stores and farmers' markets to market and sell locally grown and processed products; and 

WHEREAS, the Colorado Proud program encourages the state's chefs, restaurants and schools to use Colorado products in their daily menus; and 

WHEREAS, the Colorado Proud program supports climate stewardship and investment in high-value agriculture and diversified market opportunities; and 

WHEREAS, the Colorado Proud program fosters the next generation of farmers and ranchers to ensure the future of Colorado agriculture. 

Therefore, I, Jared Polis, Governor of the State of Colorado, do hereby proclaim the month of August 2019 as, COLORADO PROUD MONTH

We've been celebrating August as Made in Colorado Month for many years now (2005 is as far back as the record goes) and the list just keeps growing!

Looking for a make ahead meal that doesn't come from the crockpot?  Try these addictive EASY ROAST BEEF POTLUCK ROLLS from Beef, It's What's for Dinner

1 lb thinly sliced deli roast beef*
1 pkg Hawaiian style rolls (12 count)
1/4 c cream-style prepared horseradish or Dijon mustard
6 slices provolone cheese*
1/3 c butter, melted
2 T Worcestershire sauce
1 T dried parsley leaves
2 t packed light brown sugar
1/4 t onion powder

Preheat oven to 350°. Coat 9 x 13-inch baking dish with cooking spray. Cut rolls in half, horizontally. Place bottom half in prepare baking dish; spread horseradish on cut side. Top with deli roast beef and cheese (*Boar's Head, of course!). Close sandwiches. Using a paring knife, cut into 12 sandwiches. Combine butter, Worcestershire sauce, parsley, sugar and onion powder in small bowl; mix to combine. Pour butter mixture evenly over prepared sandwiches. Cover and refrigerate 1 hour to overnight. Bake sandwiches, uncovered, in 350° oven 15 to 20 minutes or until cheese is melted and rolls are golden brown.

Stock up for S'mores Day on the 10th at our S'mores Station, all set with marshmallows, toasting sticks, Hershey's chocolates and Honey Grahams. 

Filet Mignon Day is August 13th and people say our USDA Choice Colorado Proud cuts are the best in town.

Bacon Day on the 31st calls for thick cut Farmland and Dailey's or try out the Applegate Farms Naturals uncured "Sunday Bacon".

Olathe Sweet Corn should be arriving any day so we should have plenty in stock for Sweet Corn Week beginning August 29th. 

Commemorate the day (August 6th) in 1762 when John Montague, Earl of Sandwich, first put roast beef between slices of bread with all-natural meats & cheeses from Boar's Head and top with your favorite condiments and garnishes. Enjoy it here, take it back to the office or along on a hike...it can't be beat for "fast" food.

THE OTHER SIDE RESTAURANT
The mountains haven't changed, Elkhorn is in about the same spot and to the left in this 1910 photo, you can see the path that will become Moraine Avenue and eventually lead to NATIONAL PARK VILLAGE.  

The years have brought changes to THE OTHER SIDE but we'll always be a part of the history of Estes Park and the state of Colorado.
