Understand How Dietary Requirements Change According To Life Stages

We logged into a Nutrition through the Lifespan lecture with Jacqueline Steinert to capture an image of the students learning mid-class. At that moment, the discussion was on geriatric nutrition with particular attention on the nutritional needs of aging adults. Developing targeted nutritional plans based on their unique needs and common health concerns for seniors was the focus. In this course, areas of study include infertility, pregnancy, lactation, infant feeding, adolescent issues, infant, childhood and adolescent allergies and disorders, women's and men's health concerns and as with this class, the nutritional challenges faced by our aging population. An overview of autism, vaccination, and informed consent is also part of the inclusive syllabus. The course presents an understanding of how nutritional choices through various stages of life might impact overall health and vitality.

Linda Bazinet BSc, MSc takes us on a journey through the fascinating world of melatonin. Best known for its effects on sleep, melatonin is involved in much more. Described by Descartes as the “seat of the soul”, the pineal gland produces melatonin in response to nerve impulses from the optic tract via the suprachiasmatic nucleus (SCN). This small hormone is mighty – not only is it key in circadian rhythm, but it also affects mood, fertility, and immunity. In addition, melatonin is a powerful antioxidant that can cross the blood-brain barrier and has neuroprotective effects.

Transporting produce from farm to store can result in an abundance of food waste. To reduce bruising scientists developed a non-toxic curcumin-infused egg wash that slows the ripening process as an alternative to produce coating made from inedible wax.
