My first day of working from home due to Covid was on March 16, 2020. On that day, my husband and I heard on the news that 2 teachers at our son's former middle school had Covid. At the time, that newscast was a big deal. Since then, so much has happened. So many people have died. We've been keeping everyone in our thoughts and prayers.

So, it's been six months that we've been quarantined. Our lives have changed so much. Since school has recently started, our son has resumed his distance learning. My wakeup call has been hearing him play his saxophone at eight o'clock in the morning! Band is his first class of the day. I also hear the sound of his music teacher, conducting the class virtually.

Our son's cooking skills have been expanding. He made dinner for the first time - real dinner! I'm not talking about frozen foods like chicken patties and burgers. He actually found a recipe online: Spanish Rice with Chicken. It was delicious! He made enough so that we had leftovers.

He loves making peanut butter cookies. He's made this recipe several times, upon my recommendation:

2 teaspoons Vanilla
1 c Peanut butter — creamy
3 Eggs
1 c Butter — softened
1 1/4 c Sugar
1 1/4 c Dark brown sugar
1/4 t Salt
1/2 t Baking soda
2 c Flour
Preheat oven to 300ºF.
In a medium bowl, combine flour, soda, and salt. Mix well with a wire whisk.
In a large bowl, blend sugars using a mixer at medium speed. Add butter and mix to form a grainy paste.
Add eggs, peanut butter, and vanilla. Mix at medium speed until light and fluffy. Add the flour mixture and mix at low speed until just mixed. (Do not overmix).
Drop by rounded tablespoons onto an ungreased cookie sheet, (I used a melonball scoop to measure cookie dough onto the sheet)1 1/2 inches apart. With a wet fork, gently press a crisscross pattern on top of the cookies.
Bake for 18-22 minutes (for my oven, the ideal baking time is 25 minutes!) until cookies are slightly brown along the edges. Transfer cookies immediately to cool surface with a spatula.
