I personally think that with the opening up of businesses and a gradual return of what we perceive to be normal, we will see more listings come on the market. The demand is here and it is a great time to list.

Denise's Cooking Corner - Chicken Thighs with Creamy Mustard Sauce
Ingredients
  • 8 medium bone-in, skin-on chicken thighs (2¼ pounds)
  • Kosher salt and freshly ground black pepper
  • Good olive oil
  • 2 cups halved and thinly sliced yellow onion (2 onions)
  • 2 tablespoons dry white wine
  • 8 ounces crème fraîche
  • 1 tablespoon good Dijon mustard
  • 1 teaspoon whole-grain mustard
  • 1 tablespoon chopped fresh parsley
Instructions
Place the chicken thighs on a cutting board, skin side up, and pat them dry with paper towels. Sprinkle the chicken with 1½ teaspoons salt and ¾ teaspoon pepper. Turn them over and sprinkle them with one more teaspoon of salt.

Heat 1 tablespoon olive oil in a large (11 to 12-inch) cast-iron skillet over medium heat. When the oil is hot, place the chicken in the pan in one layer, skin side down. Cook over medium heat for 15 minutes without moving, until the skin is golden brown. (If the skin gets too dark, turn the heat to medium low.) Turn the chicken pieces with tongs, add the onions to the pan, including under the chicken, and cook over medium heat for 15 minutes, stirring the onions occasionally, until the thighs are cooked to 155 to 160 degrees and the onions are browned. Transfer the chicken (not the onions) to a plate and allow to rest uncovered while you make the sauce. If the onions aren’t browned, cook them for another minute. Add the wine, crème fraîche, Dijon mustard, whole-grain mustard, and 1 teaspoon salt to the skillet and stir over medium heat for one minute. Return the chicken, skin side up, and the juices to the skillet, sprinkle with parsley, and serve hot.

I use boneless, skinless chicken thighs from Perfect Cuts in Columbia Falls and LOTS more mustard!

I love historical fiction and this novel seems to be written directly to my heart with its strong women and love for reading. Set in depression area America during the WPA, a call goes out for a team of women to deliver books as part of Eleanor Roosevelt’s new traveling library. Alice Wright signs on in an effort to escape her small town life and claustrophobic father-in-law. Along with the team leader, Margery and three other women, they are known as the Packhorse Librarians of Kentucky. What happens to them becomes an unforgettable drama of loyalty, justice, humanity and passion as they face all kinds of dangers in a landscape that is both brutal and beautiful. The women persevere in their commitment to bring books to the Appalachian people who have no access to libraries arming them with facts that change their lives.
Backstory: The Pack Horse Library Project was a Works Progress Administration (WPA) program that delivered books to remote regions in the Appalachian Mountains between 1935 and 1943. Women were very involved in the project which eventually had 30 different libraries serving 100,000 people. Pack horse librarians were known by many different names including "book women," "book ladies," and "packsaddle librarians." The project helped employ around 200 people and reached around 100,000 residents in rural Kentucky. It is the forerunner of the Little Free Library that we now know found in neighborhoods all over the United States.
