Winter Burritos
   
*as taken from our Winter Childcare Menu*

6-8 sprouted grain, brown rice or corn tortillas

1 cup quinoa, uncooked

2 cups cooked black beans

1-2 tsp ground cumin

1 small onion, chopped

2-3 cloves garlic, minced

1 bunch kale, chopped

Handful of mushrooms, chopped 

C heese, grated

Butternut squash (baked and mashed)

Salsa of your choice

Sea salt to taste

Dairy-free option: omit cheese or use dairy free

Cut the squash in half and bake cut sides up in a 400 degree oven until soft (about 45 minutes).
In the meantime, cook the quinoa like you would cook brown rice.
Heat beans with cumin.  Saute onions until translucent. Add mushrooms and saute for a few more minutes.
Add chopped kale and minced garlic and season to taste with salt. 
Assemble your burritos. Heat a tortilla in the oven over an open flame or in a skillet for a few seconds.
Spread on some squash. Add quinoa, beans, veggies, cheese and salsa to your liking. 
The Full Wolf Moon

The Full Wolf Moon is on January 21st this year and it will also be a total lunar eclipse! Be sure to take the children outside to look up into the sky.

This is a time when the winter cold has taken its toll on many of life's creatures and hunger has set in. The January full moon was named after the hungry cries of wolves that Native Americans often heard around their tribes at this time of year. What is your soul hungry for? How can you answer its call?

Field Trip Suggestion
This month we celebrate the life of Dr. Martin Luther King Jr. In his memory, help teach children religious tolerance by visiting a place of worship that is not of your own faith. Share your feelings about the differences you see after the service. Teach your children to respect all walks of life and about how important it is to have the freedom to believe in what you choose. Try to point out some common aspects of your beliefs and those of the congregation that you visit.

A Winter Scavenger Hunt 

While it can be tempting to stay indoors when it is cold and snowy outside, taking your children outside to discover the beauty of nature during winter is well-worth the effort of bundling up and getting out and about for awhile each day.

One of our favorite things to do is to create Winter Scavenger Hunts and as my girls get older, the hunting can get a bit more challenging.  Keeping in mind the ages of your children, you can print out a list of fun things to look for during your next winter nature walk.   Or, feel free to use our list on the Little Acorn Learning Blog... read more
Mitten Match Game

This is a great game to play with the little ones while you are working on more involved projects with older children (like paper snowflakes!). 

Gather a bunch of mittens, making sure each has a match (a few gloves will do as well). Place all of the mittens in a basket and mix them up. This game can also be played with socks during laundry time. What a great way to help around the house!
