Stomach "Flu" vs The "Flu"

Often times there is confusion around the differences between the flu and the stomach flu. The flu is caused by the influenza virus. Influenza is an extremely contagious respiratory illness that most frequently appears in the winter and early spring. Gastroenteritis or commonly called the stomach flu can be caused by a variety of different viruses and cause gastrointestinal symptoms, vomiting and diarrhea. Prevention is the best medicine. Frequent hand washing is the best defense against spreading viruses.

Hello! My name is Ashley Vaughan.  
I started with Katie's Kids about 3 months ago and I love every single second of it!  Right now, I am a freshman at Heartland Community College and plan to study Early Childhood Education.  I can't wait for the day that I can call myself a teacher and have my own classroom.  

I grew up right here in Bloomington with my parents and my younger sister Emily.  Someday I hope to move to Salt Lake City.  In my free time I enjoy playing volleyball, which I have been playing for 11 years.  Other things I enjoy to do in my free time are painting, listening to music, photography, going for a run, and watching movies with my family.  I am excited to continue to grow as a teacher with Katie's Kids.

Katie's Kids works to support nutrition & healthy eating at an early age.  

Pumpkin Oatmeal Cookies

Ingredients:
1/2 cup pumpkin puree (not pumpkin pie filling)
1 large egg
1 teaspoon vanilla extract
3/4 cup whole wheat flour (or all-purpose flour)*
1 and 1/2 cup old fashioned rolled oats
1/4 cup granulated sugar*
1/4 cup packed dark brown sugar*
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 and 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup semi-sweet chocolate chips
1/2 cup dried cranberries

Directions:
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl whisk together pumpkin, egg, and vanilla until well combined. 
  3. In a separate bowl, combine flour, oats, sugars, baking powder, baking soda, salt, spices, chocolate chips, and dried cranberries. Fold together the wet and dry ingredients until just combined - do not overmix. 
  4. The cookie dough will be very thick. Taste the dough and add a pinch of salt if needed.
  5. Drop by spoonfuls onto cookie sheets and slightly flatten to the shape you want your cookie. Bake for 12-14 minutes until lightly browned. Allow to cool on the cookie sheet for at least 3 minutes and transfer to a wire rack. 
yield: 12-16 COOKIES
Healthy pumpkin oatmeal cookies without all the sugar and fat. Instead of chocolate chips and dried cranberries, feel free to use whatever add-ins you like best!
