The Manton Foundation is generously committing $500,000 towards Community Servings' Food is the Foundation Campaign, but only if we can raise an additional $500,000 by the end of the year. Our Food is the Foundation Campaign will fund an expanded 31,000 square-foot "food campus"
to triple our meal production to serve more of our critically 
ill neighbors in need and expand to additional communities. So far, we have surpassed 80% of our $10 million fundraising goal and the match challenge could raise an additional
$1 million.

What's the Craze with Carbohydrates?
Low carb diets have received a lot of attention in recent news. Although a diet high in too many carbohydrates - particularly refined sugars - can cause blood sugar spikes and possibly lead to weight gain, cutting carbohydrates
may not be a healthy choice.
 
Carbohydrates are our bodies' preferred source of fuel
and many of our organs, such as our brain, rely on carbohydrates to function properly. However, not all carbs are created equal. Slowly-absorbed carbohydrates ("slow carbs"), such as whole grains and high fiber fruits, are preferable to sucrose (aka "table sugar") found in candy
and cookies, and refined grains such as bagels and white pasta. This is because "slow carbs" do not cause large blood sugar spikes, can help reduce the risk of heart disease, and can help us feel fuller longer.
 
If you're considering reducing the number of carbohydrates in your diet, our dietitians recommend limiting your consumption of processed foods made with table sugar and refined grains. Instead, fuel your body with high fiber slow carbohydrates such as quinoa or brown rice, whole fruits, and vegetables.
