The Backstory: 
Monsooned coffees are stored in special warehouses until the Monsoon season comes around, when the sides of the structure are opened and moist monsoon winds circulate around the coffee making it swell in size and take on a mellowed but aggressive, musty flavor. Arabica coffee is spread on the floor of the special monsooning warehouse in Mangalore, raked and turned around by hand to enable them to soak in moisture of the humid winds. The monsooning process takes around 12 to 16 months of duration, where in the beans swell to twice their original size and turn into pale golden color. Then there are additional hand-sortings to remove any coffee that did not expand properly, and the coffee is prepared for export.
 

Cupping Notes:
Ultra-low acidity. Woody flavors, sandalwood, white oak. Slight earthiness.

The Backstory: 
The Honey Natural is a blend of 50% Black Honey processed coffee and 50% natural processed coffee. Black honey process means that those coffee beans were processed with 100% of the mucilage still intact. Honey Natural "Red gold" Developed as an espresso base or single origin espresso and nick named Red gold for the velvety crema it produces Sonora honey natural is a blend of all the farms varietals.
The honey natural process is a dry mill blend of all their varietals and process. The coffees that go in this blend are processed more efficiently than others and create a very good cup.

strawberry, berry, savory

I can't believe it's September already!  Kids are back to school; Halloween, Thanksgiving and Christmas are right around the corner!  Eventually, the weather will be getting cooler and hot coffee will be necessary to keep warm.  That being said, it's still a great time for iced coffee.  Besides our sale coffees above, our   Ethiopia Yirgacheffe is one of our best selling coffees for iced coffee.

Final thoughts, today we had to put down our dog, Lauren; trusty sidekick to the Muddy Dog, Bailey.  Lauren was a rescue dog, part beagle, part springer spaniel.  We brought her to her furever home when she was 2 1/2 years old.  Lauren had an exceptionally long, happy life at 16 years old.  Not only did we rescue her, but she rescued us.  We will always love our "little Lauren".
