Two in One

BBQ Chicken Breasts with Chipotle-Mango Marinade

Ingredients
  • 1/2 cup Vita Sana Garlic Olive Oil
  • 1/2 cup Vita Sana Chipotle Olive Oil
  • 1/2 cup Vita Sana Alfoos Mango Balsamic Condimento
  • 4 chicken breasts
  • Salt
  • Pepper
  • Vita Sana Chipotle rub and powder honey mixture of 2:1 or
  • Emeril's Essence
Instructions
  • Combine first 3 ingredients, set 1/3 cup aside. Put chicken breasts in a zip-lock type bag. Pour the marinade over the chicken and seal the bag, removing as much air as possible. Refrigerate overnight.
  • Take chicken out of refrigerator approximately a half hour before barbequing.
  • Take the chicken out of the bag and shake off the excess marinade. Season sparingly with salt and theVita Sana Chipotle rub and powder honey mixture of 2:1 ratio.
  • Or season with salt, lemon pepper, and Emeril's Essence.
  • Grill at 400 degrees. Cooking time depends on the thickness of your chicken breasts and what method you use for grilling.
  • To grill with the direct method, place chicken on grill and turn sideways after a couple of minutes to obtain crisscross grill marks.
  • Turn over after a few more minutes and baste with the marinade set aside from the day before.
  • Turn sideways after a couple of minutes to get the crisscross marks on the opposite side and grill until juices run clear.
Roasted Red Bell Pepper Fettuccini
Roasted sweet red bell peppers and cayenne pepper. Vibrant orange with a subtle sweet pepper nose. A favorite restaurant pasta, especially for salads. Lace it with Tabasco. 

Goes great with fresh vegetables and cheese, tart vinaigrettes, and parmesan cheese shavings. For a quick dish, add some pepper, a little EVOO and butter, some chopped onions and garlic, and top with a little lemon juice. Or top with the Chipotle-Mango chicken breast in the recipe listed above for flavors that are sure to please.

  SOTTOCENERE W/ LARGE TRUFFLES
That's right, Truffle Cheese!
Sottocenere al tartufo is a very pale yellow to off-white cheese with truffles that has a grey-brown ash rind. It has a somewhat mild taste and is semi-soft in firmness.

Sottocenere (meaning "under ash") is originally from Venice, Italy, and is made with raw cow's milk and slices of truffles, then rubbed with various herbs and spices. It is aged in an ash rind as a way to preserve it over a long period without losing flavor, a tradition in the Venetian region. The ash is also used to convey subtle flavors into the cheese, with a variety of spices ( cinnamon and nutmeg, among others) mixed with the ash. The al tartufo refers to the addition of slivers of black truffle into the cheese, during the cheese making process.
