BLACKBERRY GINGER BALSAMIC SANGRIA
Ingredients

SIMPLE SYRUP (WITH A TWIST)
  • 1 cups water
  • 1 cup sugar
  • 4 Healthy Life Star Anise Pods*
  • 1/2 tsp MP black peppercorns*
  • 1/2 tsp Healthy Life Whole Cloves*
  • Two 3-inch Healthy Life Cinnamon Sticks*
  • 1-inch slice of fresh ginger
  • 1 cup VS Blackberry Ginger Balsamic Vinegar*
SANGRIA
  • One 750-ml bottle dry red wine, such as Grenache, Syrah or Cabernet Sauvignon
  • 1 cup fresh apple cider
  • 1/2 cup dark rum
  • 1/4 cup brandy
  • 1/4 cup Cointreau or Triple Sec
  • 1 1/2 cups club soda
  • 2 navel oranges - sliced
  • 1 lime - sliced
  • 1 Granny Smith apple & 1 Barlett pear - halved, cored & large diced
Directions

In a small saucepan, combine water, sugar, star anise, peppercorns, vinegar, cloves, cinnamon sticks and ginger. Bring to a simmer over moderately high heat, stirring to dissolve the sugar. Boil until reduced by one third and slightly syrupy, about 15 minutes. Let the spice syrup cool, then strain into a glass jar. Pour wine in a 3-qt pitcher. Stir in cider, rum, brandy, Cointreau, club soda & 1/4 cup of the spice syrup; add more syrup if you prefer a sweeter sangria. Add fresh fruit and refrigerate overnight. Serve sangria in tall glasses over ice. Garnish with a tablespoon of diced fruit. TIP: MAKE AHEAD The sangria can be refrigerated for up to 4 days. The spice syrup can be refrigerated for up to 2 weeks

Sun-Dried Tomato and Provolone Chicken
Total Time: 30 Minutes    Serves: 4-6
Ingredients

  • 4 Tablespoons VS EVOO, divided
  • 1 cup leeks, white part only, chopped
  • 1 cup Cremini mushrooms, sliced
  • 2 garlic cloves, minced
  • 1/2 cup white wine
  • 1/3 cup Stonewall Kitchen Sun-Dried Tomato Pesto*
  • 1 1/2 pounds boneless skinless chicken breasts
  • 4 slices Provolone cheese
  • 1/2 cup basil, chiffonade
Directions
  1. Heat 2 Tablespoons olive oil in a 10-12 inch skillet over medium heat. Add leeks and mushrooms. Sauté until tender. Add garlic and sauté 1-2 minutes, making sure the garlic does not brown. Add the wine and sauté until wine reduces by half. Add the Sun-Dried Tomato Pesto and stir. Remove from pan and keep warm. Wipe out pan.
  2. Trim and pound chicken breasts to 1/2-inch thickness.
  3. Heat remaining olive oil over medium-high heat. When oil is hot add chicken breasts and sauté 4-6 minutes per side or until cooked through and the juices run clear. Make sure the pan is not overcrowded. Drain off fat. Cover each chicken breast with a slice of Provolone cheese. Reduce heat to low and cover pan. Heat until cheese is melted.
  4. Serve chicken with leek, mushroom and sun-dried tomato mixture spooned over each breast. Top with basil and serve immediately.

Red,   White  and Blue Ice Pops

INGREDIENTS
  • 3 cups coconut milk, divided
  • about 7 medium strawberries
  • 1 cup fresh or frozen blueberries
  • 3 teaspoons sugar, divided and optional.
INSTRUCTIONS
  1. Place strawberries, 1 teaspoon sugar if using and 1 cup of coconut milk into a blender . Blend on high for 1 minute.
  2. Divide the strawberry mixture between the 10 ice pop molds
  3. Place in the freezer and freeze solid about 1 hour.
  4. Mix 1 teaspoon of sugar, if using with 1 cup of coconut milk. Mix till sugar dissolves.
  5. Remove the ice pop mold from the freezer and divide the coconut milk between the 10 ice pop molds.
  6. Return to the freezer and freeze until solid, about 1 hour.
  7. Add the blueberries, 1 teaspoon sugar, if using and the remaining 1 cup of coconut milk to a blender. Blend for about a minute or until the blueberries are combined with the coconut milk.
  8. Remove the ice pop mold from the freezer.
  9. Divide the blueberry mixture between the 10 ice pop molds.
  10. Place the lid on the ice pop mold and insert the ice pop sticks.
  11. Return to the freezer and freeze solid.
  12. Enjoy.
